Many of us, myself included, come from a dysfunctional family which adds a lot of weight to the challenges of caregiving. I have read stores on various threads on other topics and decided it would be good to have a thread just for this topic for people to share, vent and discuss.
The idea for this thread originated on the thread named "The Caregiver....How are YOU doing today?"
Taking the fat off makes sense but I use the gelatin in gravy
Emjo Did you say before that you go glutin free?
I am becoming interested in the bad effect of GMO foods, but still have a lot of research to do. I have also discovered "leaky bowel syndrome" which is not recognised as a condition by the medical community. However many of my symptoms can be explained by that and all my medical tests keep coming up negative. They have found eosinophylic osophagitis and raised levels of eosinophysils in my blood. These are the white blood cells that fight infection and inflamation. I still have to have the colonoscopy in Jan and would not be shocked if they find eosinophyls in those biopsies too. The clever Drs say allergies but again all tests are negative. For me the only way forward looks like taking resonsibility for myself and seeking a diet free of GMOs. I. only realized last night how deadly these foods can be. The use of GMOs had already been banned in Europe
I posted something to you regarding the bone broth soup, and don't know what happened to the post. This is interesting you bring this up. I recently had a bone scan done, and was told to bone up. I too, can't eat dairy. Of course, I admit that I'm not as vigilant as you are. I do know what plant based foods have calcium in them, but I made some bone broth just a week ago. I read about the minerals, and benefits, and even the gelatin that forms but this apparently can only happen when one has simmered the bones for the 24 hr. period for chicken bones. I also read how good this is to heal the gut. Truth be told.......I think this is where sinus problems originate, so I thought it would be good. I also used the vinegar as you've described. Mine still needs some work, and more simmering time.
Thanks for the info.

My mom and her narcissistic sister used to make very catty remarks about women.
I'm sure my sister learned this behavior from mother. But I must say.....my sister's brand is very vindictive. Your quote about "beauty fading" is brilliant.
Couldn't agree with you more.

What an ordeal. Well, do listen to your attorney. I do understand your anger, but strategically speaking as it pertains to court behaviors, the attorney probably know best in terms of they wanting to protect you from more damage via opposing attorneys, and often the tricks they can employ in a court room in front of a judge.
Keep the faith that things will be o.k., and this will pass. You'll be able to have more restful nights of sleep.

I've read that one of the first things one may see while making the bone broth,
is what is referred to a scum, I know doesn't sound pretty. This will appear soon in the simmering process. You can spoon this off, but some people just leave it in.
Then of course if one is going to include some of the skin you are going to have some of the fat from that in the broth. Apparently, for the gelatin to form if you're working with chicken bones.........this happens after a 24 hr. simmer of the bones.
If you don't like that much fat in the broth, just allow it to cool, refrigerate, the fat w/rise to the top. Then, you can just skim off as much of that as you'd like.
However, the gelatin that is formed after the proper simmering time, this is the good stuff, if you want to eat this for medicinal purposes, very good for the joints.
I hope I can find the article I read about this, and I'll post it.

How are your mom's calluses doing?
Calenula cream is great for softening the skin.
Olive oil works well also. I use it on my skin, instead of creams that are on the market. Many of them have too many ingredients, and some believe it or not end up drying out the feet. I personally would never use something containing petro chemicals in it such as vaseline. The feet are receptors, of the body, hence more sensitive than we realize.

"Calendula cream."

Sharyn - I do use a milk substitute as I am allergic to dairy. Rice milk has the least flavour, coconut milk and almond milk put a little spin on it. I also use a gluten free thickener for making white sauce like corn starch, powdered tapioca etc. I used to use cream of mushroom soup but alas can't any more. It is a little different but I haven't had any complaints.
re skimming you don't have to. Margeaux gave good info. Gelatin is pure protein and is what you want from this. Amino acids make up proteins and there are a couple in bone broth that you don't get so much of anywhere else. Whatever makes fluid gel is protein - like making jello. Bone broth may gel or not depending on how much water you add. I actually make soup out of the bone broth, but you don't have to do that. I haven't found chicken feet, but anything that is mostly bone and cartilage can be used. Basically you need water, bones and a little vinegar. Vegetables can be added for additional nutrients, and strained out when the broth is ready. As Margeaux noted, it must be boiled/simmered for a long time. I do it until the bones are crumbly. Fat will rise to the top when it is cooled and you can remove it if you want to. If you want to keep the broth in the frig leave the fat on it as it keeps much longer that way. I always add turmeric to soups/broth as it is anti-inflammatory. No grossed out here. I always liked chewing on the ends on chop bones.
me - I will address you in a separate post.
I find coconut oil is good for the skin too. I buy it fairly cheap on line.
Sharyn - chicken wings would be good. Here you have to pay for any bones you can get. When I make the turkey neck dish it always gels. The vinegar in the sauerkraut must help. I use a crockpot or my stainless steel. You don't have to put much vinegar in - just a spoonful or two depending on the amount of fluid. I don't think it is any more acid that an tomato sauce - maybe less. From what I have read stainless steel is safe for cooking acid or alkaline foods as regards iron, nickel and chromium.
Sounds like the home where your mum is is doing a great job.
It is good that your daughter has a diagnosis and they are referring her in school, but does not simplify your life at all, as she will need more support.
Hope aunt does come and help out. Blessings
From what I have read, bone broth has anti-inflammatory properties, adding turmeric is even better. Apparently some people drink the broth 8-12oz a day just for the added benefits.
I would also have to pay for the bones here. I checked at work but could not even find soup bones available. Tomorrow I will go to another grocery store to find beef bones. If the bones are raw, I read that it is best to roast them first.
I have 2 chicken carcasses cooking with onions, celery, carrots, parsley and garlic.I am making the chicken first since the holidays are coming up and will use it to enhance my cooking with turkey for Thanksgiving and Christmas.
I will not be accepting any phone calls from work the next 3 days. I worked 6 days this week, have much to work on plus I had requested Oct 29th off but did not get it...I requested the Nov 11th off as a reschedule to get Midget clipped. A new girl starts tomorrow for the deli....that last 2 girls quit after a half day and the other after 4 days. I think that because of my age, I will always be a closer...it seems this company prefers to favor the younger people because when they interview...they have exclusions to being hired such as taking care of a young child. When I was hired...there were no exclusions allowed...you had to be able to work all shifts regardless. It is something I just have to suck up and deal with until I can retire...Can I do this for another 9 years????
Now is there a difference between the chicken fat, and this gelatin?
I'm asking since I read that for the gelatin to be released from the bones, one must simmer it longer. I do know that chicken fat appears, well in oil form very soon when simmering a chicken, or pieces, and thereafter of course when I put it in the fridge, the fat coagulates, etc. I just want to make sure I'm getting the true goodness of this gelatin. It's very interesting, I just love to learn the added benefits about these foods.

You're welcome! Good, don't answer that cell, nor texts, you need your time off too.

The fluid or gel part also contains minerals which are beneficial. As I mentioned the broth may or may not gel depending on how much water you have added. A caution - if it has gelled and you keep it for a long time and it "ungels" - goes liquid again, then it is time to throw it out. Keeping the fat on top of the broth allows you to keep it much longer.
Bone broth is said to be healing for the gut (VERONICA) good for the joints, for inflammation in general, and other things. It is very cheap nutritious food.
Sharyn -they really are leaning on you, but not wiling to work with you to meet your needs. If you wanted to be more available, would they be willing to pay you more or compensate you in other ways? It has to work for you as well as them, and they seem to only consider themselves. Looks like they are managing by crises - not a good thing.
Joan~That is the problem with retail work....if you are not a manager...the perks are few...last week I worked 6 days; including Sunday...that means they have to pay me OT for the 6th day plus we are under the old contract right now which means I also get 1-1/3 time for working Sunday. However, the appreciation is not given...not that I want constant pats on the back...but when they take the attitude that I have nothing else to do...well...not true...I do have a life even though my life is very simple with no night life and extra socializing. The deli manager is currently working at my old local store for 2 months so everything is falling on the bakery manager now. The bakery manager texted me saying she meant to have me scheduled today but made a mistake...that is fine she made a mistake..but when I see the next weeks schedule, I make my plans for spending time with my mom, what I am going to do at home, errands to run....just not willing to give it up weekly for them. I will text the bakery manager later, letting her know if she needs me on Wednesday I will come in....I requested tomorrow off and not giving it up. She said I was suppose to work 40 hours this week but she messed up...well I will give them Wednesday back...but I suspect she wont take it since today was the day they really need someone.
My daughter is struggling with working and be a new mother. Her hubs is very supportive...but...he just can't function on less than 8-9 of uninterrupted sleep...he gets grumpy and cranky which makes it hard for my daughter as she tries to please him, take care of the boys, and work. I do believe that with men and taking care of babies is something they had to grow up witnessing their dad being part of the caregiving for themselves and sibs. As a result, my daughter has applied for a position within her company to be a trainer....M~F with very little OT and it will be a step down for her.
Thanks so much for the explanations about the fat vs. the gelatin.
Now I get it.

Thanks to you too, for the explanation about the gelatin.
This is great how we seem to having a whole section about cooking here.
I'm thawing a whole chicken, and can't wait to start the bone broth from it,
see what I come up with this time. Yum!

To all be reading to catch up tomorrow I hope.
***Grandpa fell today and I wasnt there. Im trying to be there as much as I can but today Im blah with a cold( again), after I fixed him lunch I told him keep trying me on the phone if he needed me Im going home to sleep and take Nyquil. Yes, because during the day he can have my dad and others check on him so I can be more available at night. Well I woke up about 4 hours later and he didnt answer, I went over and he was on the floor yelling help. Well he wont wear his FREE Alert He has so he can get them to call us or ambulance. He is ok but sore. He needs 24 hr care.. just to keep an eye out in case of the times like these. Drs says hes of sound mind but stubborn.
Is it neglect if I tell him again Im looking for a job and will be gone 40hrs plus a week and when they hire me go to work even if he hasnt hired anyone else? I talked to my dad and my Aunt and they say work, you and we warned him its on him. But yet, Its still on me right because Im the only physical one to do so for him? I know you all told me have the people come out and eval him, hes had a Dr and therapists come out and all cleared him! As long as he has the Alert thing tho I believe. I love him but....
What do I do? I want and need a job, Im sock again from all this stress from everyone. Good thing is Im eating less! Need to exercise but sooo tired but eating less is a start right?
Linda it is true that many women work 2 jobs Even a woman with young children who works only at home works very long hours
Have fun cooking, Margeaux. Soon after I finish one batch, I need to start on another, as it gets eaten quickly and takes several days to prepare.
Me -sorry to hear that gpa fell. If he is of sound mind and will not wear an alert, I believe that you are not responsible. Check with his doctor or a social worker. If you are sick you need to be able to rest. He has other options, but refuses to take them. You are entitled to make decisions for yourself and your kids. Again check with a social worker, but he is still competent so can make decisions in his own interest which would mean hiring someone. He cannot demand that you be the only one to help him. You might want to ask that question to the whole forum. So I say it is not still on you. He is competent and responsible for making arrangements for his own care. Basically nothing ties you to him. If he was not competent you might have to notify social services that he needs help and give them some time to arrange it, but he is competent and you are telling him that you are looking for a job and that he needs to find some other help. As far as the house is concerned, what I have read here is that should he run out of money looking after himself and need Medicaid, the house would be sold when he dies and the money used for pay back. It might be worth asking about that to on the whole forum. I don't think you can count on getting it. Better to have all the right information when making decisions. Eating less is good as long as what you are eating is nutritious. Your body will suffer if it doesn't get the nutrients it needs.
