Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
Turkey, sliced, with cranberry sauce and mayonnaise on 7 grain bread.
The 2nd was used to make Skillet Orzo with Spinach, Chickpea and Lemon.
Both were good. The humus freezes well. I will try to freeze some of the skillet dish tomorrow.

One of my favorite possessions is my mother's recipe box (an old green index card box) with her recipes recorded in her own hand! A second is my paternal grandmother's recipe book, a notebook she recorded her recipes into. She died when my father was 23 and Dad loved my learning how to make her butterscotch pie, enduring several versions with burnt sugar and bits of fried egg and other lumps floating in the custard while encouraging me to make another "better" one. Being a techie, I have the recipes preserved in word formatted documents to print on index cards or notebook pages, even some versions with my modifications to reduce fat or sugar while preserving the flavor. While taking care of Mom and Dad, I didn't make them much except for their favorites: whipped cream cake, lemon, and butterscotch pies. With my Mom's death, I thought I would only be baking for cousins' luncheons, special occasions, and condolence and/or illness meals, but then the requests started after I made an apple cake for the July cousins' luncheon...
I am baking once or twice a week on request; the grand-nephews are teenagers (with the appropriate appetites) and asking for homemade after school and practice treats. The older nephew likes apple pie and the younger prefers chocolate chip cookies while they both love brownies and the youngest brother (age 7) likes it all but still prefers pieces of honeydew melons! I have the football players picking, peeling, and dicing apples! Not a bad deal: they visit almost every afternoon and I will probably be remembered for my sweets! Oh well, there are probably worse things to be remembered for.
But there's rhubarb, double crust or dutch apple, sour cream raisin, mince meat, cherry, blueberry, pumpkin, custard pies with any kind of berry you like, (I have a recipe for elderberry custard that eliminates the seediness by just using the juice, yummy!), pecan pie, shoo-fly pie. And all the lovely pies in pre baked shells like key lime, lemon meringue, coconut, banana or chocolate cream, and no bake strawberry, raspberry, blueberry.....
But I won't be making any of them because if I did I'd gain 1000 pounds. Sigh.
If you like blackberries, a peach blackberry pie is outta this world yummy, especially when it is cold out and you get to enjoy the taste of summer.
Dinner? Boring meatballs for Mom and for myself I'm going to bake chicken parmesan. Already steamed broccoli yesterday. I'm trying not to eat carbs but lately I'm stress eating so I am eating bread (my weakness).
My mom made the best fried chicken ever! I miss her baked goods, pies, bread, cakes, etc.
To keep them from getting brown spots they should be stored flat, not touching each other.
Canned peaches are super easy to do, if you don't want to freeze them.
