2 cans of garbonzos, 1 regular + 1 lower sodium. I used the first to make humus.
The 2nd was used to make Skillet Orzo with Spinach, Chickpea and Lemon.

Both were good. The humus freezes well. I will try to freeze some of the skillet dish tomorrow.

Our little grocery store has boneless strip loin steaks at a BOGO sale price - two steaks for $25 still seems way expensive to me but what the heck, I can splurge every once in a while. Hopefully I can get it cooked decently, I wish I'd kept my little charcoal hibachi.

Earlybird and others, I didn't know that about Mac's for apple pie. I still have mac apples on the tree but it won't last long so I'll go out today and pick them and make a pie. Thanks for letting me know!

This evening we had egg plant Parmesan (furnished by our neighbor). I sliced up a zucchini and fried it up to go with the Parmesan.

Our neighbor must operate with ESP. Whenever I think we haven’t heard from her in a while, within a week or so she calls to offer us some of whatever she’s making.

Posted a longish post before the storm took out my internet! Today I made 5 loaves of zucchini bread, and have enough zucchini left for 5 more loaves once I get more flour tomorrow early. except some of the zucchini is actually grated patty pan,, all the stuff I read says it works fine so we shall see! Chocolate and Pina Colada loaves,, they freeze great and taste like summer all winter long. I set up an "assembly line" and just get it done. We are in an area loaded with orchards, and the peaches and nectarines are wonderful this year, I have 2 large bowls in the fridge, fresh fruit salad every day this month. Strawberries and blueberries are also cheap this season here. I did splurge on some cherries,, now those I find are very pricey!

One of the joys of Southern traditions is the Sunday dinner for the "entire" family. My mother prepared a meal for her immediate family (spouse and children) weekly and as the years went by, brothers' wives and the grandchildren were additions. As a teenager, I prepared the dessert dish for family dinner since I still lived at home and my brothers were 10+ years older and married with children. I made every kind of pie and cake from blackberry clobber to grandma's butterscotch pie to deep-dish apple, often from local fruit we gathered or from some purchased from local farmers. Everyone was young and no one was particularly watching their waistline so we really enjoyed the sweets.

One of my favorite possessions is my mother's recipe box (an old green index card box) with her recipes recorded in her own hand! A second is my paternal grandmother's recipe book, a notebook she recorded her recipes into. She died when my father was 23 and Dad loved my learning how to make her butterscotch pie, enduring several versions with burnt sugar and bits of fried egg and other lumps floating in the custard while encouraging me to make another "better" one. Being a techie, I have the recipes preserved in word formatted documents to print on index cards or notebook pages, even some versions with my modifications to reduce fat or sugar while preserving the flavor. While taking care of Mom and Dad, I didn't make them much except for their favorites: whipped cream cake, lemon, and butterscotch pies. With my Mom's death, I thought I would only be baking for cousins' luncheons, special occasions, and condolence and/or illness meals, but then the requests started after I made an apple cake for the July cousins' luncheon...

I am baking once or twice a week on request; the grand-nephews are teenagers (with the appropriate appetites) and asking for homemade after school and practice treats. The older nephew likes apple pie and the younger prefers chocolate chip cookies while they both love brownies and the youngest brother (age 7) likes it all but still prefers pieces of honeydew melons! I have the football players picking, peeling, and dicing apples! Not a bad deal: they visit almost every afternoon and I will probably be remembered for my sweets! Oh well, there are probably worse things to be remembered for.

Well the entire peach pie is gone. Mom loved it as well as the rest of the family. Took an hour to make and less than half hour to eat the entire pie and sent over a big slice to my cousin.

cwillie, the pies sound so good. Wow! I would like to try them all. Plum pie sounds great. I never had plum pie and I love plums. Perhaps I will make a plum pie in the future. I think plum season is over, though.

There are so many kinds of pies that you could eat a different one every week and yet people default to the same old same old. My mom made a wonderful plum pie, that along with peach was probably my favourite.
But there's rhubarb, double crust or dutch apple, sour cream raisin, mince meat, cherry, blueberry, pumpkin, custard pies with any kind of berry you like, (I have a recipe for elderberry custard that eliminates the seediness by just using the juice, yummy!), pecan pie, shoo-fly pie. And all the lovely pies in pre baked shells like key lime, lemon meringue, coconut, banana or chocolate cream, and no bake strawberry, raspberry, blueberry.....

But I won't be making any of them because if I did I'd gain 1000 pounds. Sigh.

Just took out my peach pie. Excellent tasting. flaky tender crust and juicy peaches with a touch of lemon and cinnamon. It it so delicious. Got the idea of peach pie from golden and the lemon from Isthisrealyreal. I am going to freeze some later today.I just cut a small slice and it is hot but wonderful. I couln't wait. Just love peaches. Don't know why I never made peach pie before.I feel like hiding the pie but that would not be too nice.

If you like blackberries, a peach blackberry pie is outta this world yummy, especially when it is cold out and you get to enjoy the taste of summer.

Oh Jenna, Macs are great for pies. My mother was an excellent pie maker. She used to make 8-10 pies at a time. Visitors could not resist her pies and our priest used to visit and have tea with mom. She used Macs and her pies were so flavorful and jucy I am picky I will only eat my own apple pie which is exactly as my mothers. My cousin who never compliments on my cooking stated it was the best apple pie she ever ate. Not bragging just making a point just the right amount of spices and sugar with the freshest apples just picked from the apple trees makes a fantastic tastful pie. Jenna try making a pie for your mom with Macs and see for yourself how great tasting and delicious the pie will taste. Pies are an art. I picked it up easily from my mom baking all her married life.

I know that a lot of apples aren't recommended for pies or baking but I think it depends on what you are trying to accomplish. I personally can't stand the typical grocery store apple pie that is all hard apples surrounded by sugary goop, I want my apples tender and Macs would be just fine for me 😋

We have a McIntosh apple tree in front of the house and due to all the rain we had these past months I had so many apples that my Mom asked me to make her an apple pie which I did but I didn't use McIntosh (I ended up buying Granny Smith) because I read that McIntosh can get too watery in the pie. Mom didn't know.

Dinner? Boring meatballs for Mom and for myself I'm going to bake chicken parmesan. Already steamed broccoli yesterday. I'm trying not to eat carbs but lately I'm stress eating so I am eating bread (my weakness).

Polarbear, nothing I make tastes as good as or the same as what my wife made. She was a good cook, nothing fancy but I called her “my gourmet cook”. In all the years we’ve been married she only made two meals I couldn’t eat and they were new recipes she wanted to try.

My mom made the best fried chicken ever! I miss her baked goods, pies, bread, cakes, etc.

Thank you, Isthisrealyreal. I am going to make a peach pie tomorrow thanks to golden and then freeze the rest as you advised. I never thought of freezing them. I am so glad the peaches will not be wasted. Nice of cousin to pick them for us. Thanks again!

EB, you can slice the peaches, toss them in lemon juice, lay them flat on a cookie sheet and freeze. Once frozen bag them up and you can use them for whatever you want in the next 6 months.

To keep them from getting brown spots they should be stored flat, not touching each other.

Canned peaches are super easy to do, if you don't want to freeze them.

EB you could make peach relish and/or peach chutney, Some years ago now I made a variety of chutneys and canned them. They were great! You could also can peaches plain or spiced or make peach jam. Then there is peach cobbler, peach pie, peach cake...

Lots of good recipes on the internet.
