I was super busy at work yesterday, and I am working the weekend.. and have not been sleeping well. Woke up to lots of rain, ,not my kind of day at ALL. All I wanted to do was nothing.. LOL But hubs has been working his butt off and I know he likes to go out to eat or some such ,and he couldnt do anything outside today. So I suggested we go the the nearby Amish Market and have lunch, get some easy food for the weekend I could take and he could eat without cooking much. I am glad I did,, we had a nice time. Got some creamed dry beef, sloppy joe, seafood pasta salad and ham salad for munching, and some great baked goods for treats ( I can freeze some for later) So we will be munching for dinner,, LOL. They are not cheap, but the stuff we buy is always great and some of it reminds me of Lancaster where I grew up. So even with the rain it was good

Prevent kidney stones:
If you're on a kidney diet, typically, Italian sauces should be used in small quantities because they can be high in sodium, phosphorus and potassium. If you're at a restaurant, order the sauce on the side, if possible, but be advised that many Italian restaurants already have their sauce and pastas mixed. A good choice would be salad, bread and a very plain pasta, such as one served in garlic and butter. Pizza is usually salty and high in potassium and phosphorus. If you eat pizza, eat one slice and supplement with a small salad. A pizza with hamburger, green pepper and/or onions would be preferable to a pizza with pepperoni, sausage, olives, anchovies and/or extra cheese.

I made blueberry buckwheat pancakes with maple syrup for my mother this morning and it is one of her favorites for breakfast. This am while eating she informed me the pancakes were lousy and she likes the personal chefs food better. This is not a whine so I posted on this thread. I am thrilled she loves the new chefs meals. Since the chef she dislikes the food I prepare. I just might have to add breakfast and lunch to her chef meals.
My niece informed my mother" no more pancakes for gram." LOL.

I had an appointment today and took out one of the chef meals. Baked salmon. sweet peas and butternut squash. She told me at least 5 times how wonderful it was and she ate the whole meal. I am delighted that my mom likes the food and she is satisfied. Just seeing a big smile on her face makes my day. She also told me she likes my meals too.
I had a haddock sandwich and lemon with potato salad takeout for dinner.

That is one of my favorite dishes. I've been using an air fryer for quick, hot meals for my mother. Eggplant is among the favorites lately.

HI Polar, the chef makes 12 large meals and I split them in half which makes 24. The cost is $150 for shopping and cooking and I pay for the groceries which is about $220 per visit for everything. He spent 3 hours cooking and pureeing the food.

Polabear, The chef does all the shopping, brings his own equipment, cooks the food and cleans up the kitchen. The cost includes shopping and preparing the food which is custom pureed for $150 and I pay the food bill. The entire bill was $220 for 12 gourmet hearty puréed meals. The food bill ranges from about $50-$70 per visit. I spend a lot more on groceries and gas at the grocery store, Costco's and Trader Joes. I have the service every other week which totals about $400 a month. The meals are huge quantity and can actually serve two people per meal so I split them in half which totals 24 meals. I plan on doing this indefinitely as long as everything goes well.. I just love it!

The chef was lovely and professional. I did a taste on everything and it was so delicious. My mother liked her meal very much . She had fresh salmon with blueberry sauce, mashed potatoes with butter, garlic and cream , squash seasoned just right. He also made fresh haddock, sweet potatoes with maple syrup, cinnamon with peas and a oven veggie frittata with roasted bell peppers, mushrooms, onions and cheese. The freezer is full. Yay! The meals are double portions per meal so I have 24 meals for two weeks. Love it.

Today I was just putzing around,, made a "ugly duckling cake" that my mom used to make,, has a can of fruit salad in it and a coconut topping,, MY hubs keeps saying the topping looks like saurkraut! If I can get him to try it I think he'll love it. Then I made a big bowl of 3 bean salad,, I am a vegi lover.. Plus we have lots of fresh fruit.. so I think we are just going to graze tonight.

We hired a personal chef for my mom. He just arrived. Everything is fresh and in the oven and on the stove. It smells so good. Hope she will enjoy the meals.

Frozen Lasagna. Did not need anything else.
Made a beef stew last night. It passed inspection, but I did not really like it.
Will try a different recipe another day, using my pressure cooker.
There is salad to make fresh, but I don't want to.
It was 92 degrees here today.

ITTR: It is! I swear that I am hooked on it and I got DH hooked, too. Your roast beef hash sounds so good - enjoy along with the ceasar salad and homemade ceasar dressing!

Cwillie, asparagus grows well in large pots, like 24" and larger. That's how I started mine years ago.

I live in the desert southwest and we will be done with gardening before other areas really get started. Spinach is a winter vegetable here😀 but, fresh is so delish you can not hardly eat the stuff from the store afterwards.

My precious husband built me 5 raised beds for my birthday and I have been experimenting with what I can grow. I am super happy but, it has been an odd year here, very warm all winter, so lettuce and such just bolted. I am hoping that my watermelon and cantaloupe do well. Those are about the only thing that grows during our hot summer. Maybe some peppers if you shade them.

I was just thinking I should plant asparagus ITRR (dreaming really because I've got no where to put it). All I've got so far are a few leaves of spinach, so I'm having a small salad to go with some frozen lasagna.

Grilled pork chops with the 1st potatoes, asparagus and tomatoes from the garden.

Nothing tastes as good as freshly harvested veggies and fruit.
