Well I didn't cook it but I sure enjoyed it! 3 of us in my "inner Circle" have decided to try something new every month. 1 lost her hubs 1 1/2 years ago ( he gets buried in Arlington later this month) I lost my mom a few months ago, and 3rd lost both parents to ALZ a few years ago and is going through a rough patch in her marriage ( stepkid problems).. Today we went to a Tea! They even provided hats!! we had a nice salad, scones, tea sandwitches and cookies. And unlimited pots of tea. I am not a hot tea lover but lots of choices and I loved them all. I have to admit my first thought was that I was going to starve... and I am not a huge eater.. but I was pleasantly surprised that I had enough to eat! Things were tiny but enough selection that I had enough. We have also gone to a Salt Cave Spa, with a massage and then spent the night at our river house ( no internet/very limited phone service) so that was fun and relaxing too. I hope we can keep this up,, it really makes a difference when you have something to look forward to.

My Mother's Day Menu:
Turkey meatballs seasoned with fresh ginger and cilantro with coconut basmati rice. Pistachio jello pudding. Chocolate chip cookies.
Assorted cocktails. Wine.

Thank you. New to this site and had started thinking I made a mistake joining.

I made cheeseburger casserole for supper . Ground beef, shell pasta, tomato sauce, garlic, onion, mexican style cheese and seasoning. Mom usually joins us for meals sit was 5 of us.

Not right now, some time in the next few months, I am going to type up all of my mom’s recipes to give to all of her grandchildren.

They loved her cooking and I did too. I think mom would like being remembered as the best cook in Louisiana!

I ate a whole "family size" package of pre-made bistro macaroni and cheese today. It's definitely a special comfort food for me, not something I eat regularly. Last time I remembering eating like that was during caregiving, where I'd pick up a bunch of pre-made potato dishes (au gratin, garlic mash, etc.) for my dad but then I'd eat a bunch of it, too.

I went over the fish carefully checking for stray bones but it never even occurred to me to check the other side for scales - ugh. I get that they are little fish but come on, at over $20/lb I expect better. I think some foods are just better left to restaurant dining.

I bought the makings for so many wonderful meals:

-3 sausages - one to eat on a bun, 1/2 of one to stuff the won ton wrappers I took out of the freezer for soup, the other 1 1/2 to add to a stir fry of cabbage, bean sprouts & onions
-I bought bacon, lettuce and a tomato so....BLT
-they had fresh lake perch!!! of course I'll have to make cabbage salad and fries
-and to use up the other panini buns
meatball sub (frozen meatballs and leftover marinara sauce)

Our chicken is going a long way....Chicken dinner last night, then today had chicken salad sandwiches for lunch, and chicken stew for dinner. It worked well to pre-cook the carrots in the pressure cooker.

I'm not sure what you are trying to say invsbl? The fact that caregivers are often isolated is the reason the conversational threads have been so popular, sometimes a break from caregiving and a chance to talk about something else is a very welcome diversion.

I put some of the roast chicken breast with the steamed greens, carrots & sweet potato in a bowl & added hot water. Lazy chick & veg soup. The others had the full roast with gravy & potatos. I'm finding a lighter dinner suits plus soup is a good way to get extra water in. Nice comfort food too.

I haven’t felt like eating much at all lately.

I did buy a chicken to roast for dinner this evening.

So, I will make chicken and roasted potatoes and carrots. Possibly a salad too.

Not sure how much I will eat but at least I will have food cooked.

My husband has been getting take out because he knows that I haven’t felt like cooking or eating for the past couple of days.

I enjoyed seeing mom eating the small portions of the dishes that I bought for her, and the treats.

She is at a place where she can no longer eat or drink.

It’s sad. She is a skeleton with flesh on it. She enjoyed ice cream the most!

I am glad that I brought all of her favorite ice creams when she was eating.

I will think of her every time that I eat ice cream.

What food most reminds you of your mom or dad?

My dad was a huge breakfast person. He also loved soup! I love soup too. We shared that. 😊

Kale flavors the salad. It is not all Kale.
The Poppyseed dressing sweetens it.

Kellse, I don't "like" Kale either. But the "foodie underground" has a recipe for chocolate kale cake. It is perfectly all right to not like Kale and say it. You will notice people respond with a sales pitch for Kale.

In a stir-fry, some spinach, kale, onions, peppers, broccoli, brussel sprouts, is nice. Over rice.

Kellse, 10yo's everywhere agree with you! lol That's why I said... I think it's an acquired taste. My former neighbor could cook up a pot of greens, including kale, that were delicious. It's all about what you do with the kale. But some people just don't like it, or any other greens.

lol Eating kale is an acquired taste, I think. I get it loose or pre-cut/packaged at local groceries and cook it in a covered skillet. It's a healthy side dish for anytime and tasty with a little seasoning. I've had fresh kale salads in restaurants that were very good but I prefer to cook it when I make it at home.

When I was a kid, we grew kale in the garden. The kale plants would get massive. There was always kale to eat in the summer and us kids were sick to death of it. I'm surprised I gave it another chance as an adult but the kale I find in grocery stores now doesn't have the same strong flavor I remember as a kid.
