Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
My Uncle picked up a Honey baked ham and made his homemade rolls and one of my brother's brought fresh green beans and the other brother brought scalloped potatoes and I brought deviled eggs and a fresh fruit bowl and my Aunt made her Coffee Toffee Pie .Everything was so good and I'm still so full at bedtime.
It was good to be with the family outside for a little while too.It was the first time wev'e all been together in a year.

Just the two of us, we had steak and eggs for breakfast.
Lunch was vanilla ice cream with chocolate sauce.
We have ground beef for dinner, but no fun hamburger buns.
I love lamb! Yummy!
We have a great Greek fest that makes incredible lamb dishes. Love it! Of course, all of our festivals are closed due to Covid but when they open again I will go and enjoy my lamb, Greek salad and pastries.

As promised, here is the recipe. I like it as written but I made it with peaches because that is my mom’s favorite cobbler. I love the berry cobbler!
I like this recipe because it isn’t super sweet! If you like things a bit sweeter, just add a bit more sugar in the fruit.
This recipe is from Sally’s Baking Addiction site.
Ingredients
8 cups berries, a mix of blueberries, blackberries, raspberries and strawberries. Or you can use all one berry. Sometimes I do all blueberries or blackberries. You don’t have to have exactly 8 cups. Sometimes I use a little less.
1/4 cup granulated sugar.
2 tablespoons (15 g) cornstarch
1 teaspoon lemon juice
1/2 teaspoon pure vanilla extract
Biscuit Topping
1 and 1/2 cups (190 g) all-purpose flour (spoon and leveled)
1/3 cup (65 g) granulated sugar
1 and 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons (85 g) unsalted butter, cold and cubed
1/2 cup (120 ml) buttermilk, cold
Extra:
1 tablespoon buttermilk plus 2 tablespoons course sugar.
This is brushed on top of the biscuit topping before baking. It will give the top of the cobbler a sweet crispy crust.
Instructions
Preheat oven to 350 degrees (177 C) and butter a 9X13 pan.
I don’t use a 9X13 pan because I like a thicker biscuit topping, so I use a 8x8 pan. Or something close to that. It doesn’t matter what the shape is. It can be square, oval, or rectangular.
Filling:
In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice and vanilla extract together. Spread evenly into pan.
Topping:
Mix flour, sugar, baking powder and salt together in a large bowl.
Using a pastry cutter or fork, cut the butter into the mixture until it resembles course meal (pea-sized crumbs). You can also use your hands to mix.
Add the buttermilk and mix together. Form a ball. Grab a handful and flatten it out. Place flattened dough onto your fruit until fruit is covered. Every part of the fruit doesn’t have to be completely covered if using a larger pan.
Brush the top of biscuits with the small amount of buttermilk and sugar. Don’t worry if you don’t have course sugar. Regular sugar works too.
Bake 45 to 55 minutes until golden brown. Stick a toothpick into biscuit. If it comes out clean, it’s done.
Let cool for five minutes and top with ice cream or whipped cream.
Cover leftovers and place in refrigerator for up to four days.

My husband loves this recipe. He is like I am and doesn’t like super sweet deserts. This recipe allows the natural flavor of the fruit to come through.

I never had homemade but, when I lived in Vegas there was a hole in the wall restaurant that made pancakes from around the world. I sure missed them when they closed.
Currants sound great in them.
Me, I avoid cooking whenever possible, but lately I've gotten rice papers and make my own version of egg rolls and roll up salad in them.
