Anybody have ham and asparagus leftovers? I didn't want to do the whole dinner thing. I found a recipe online for ham and asparagus pasta in a lemon cream sauce. It was yummy and very quick to put together and have leftovers for lunch for a few days.

We had the best dinner at my Aunt and Uncle's home today.
My Uncle picked up a Honey baked ham and made his homemade rolls and one of my brother's brought fresh green beans and the other brother brought scalloped potatoes and I brought deviled eggs and a fresh fruit bowl and my Aunt made her Coffee Toffee Pie .Everything was so good and I'm still so full at bedtime.
It was good to be with the family outside for a little while too.It was the first time wev'e all been together in a year.
I hope all of you here on AgingCare had a really nice Easter too~

Happy Resurrection Sunday!

Just the two of us, we had steak and eggs for breakfast.
Lunch was vanilla ice cream with chocolate sauce.

We have ground beef for dinner, but no fun hamburger buns.

Egg salad on a hot dog bun for breakfast, smoothie for lunch and I finished up the chicken soup I made last week for supper. I'm saving my mini crispy bunny for bedtime.

I love lamb! Yummy!

We have a great Greek fest that makes incredible lamb dishes. Love it! Of course, all of our festivals are closed due to Covid but when they open again I will go and enjoy my lamb, Greek salad and pastries.

Thank you, golden. I have been craving that kind of chocolate since I read your post. Sorry about the mistake. I will do some research on it. I use a lot of Canadian products. I love the produce from Canada and it is so much fresher than most produce in the grocery store. Thanks again.

EB - it was me who wrote about lavender and blueberry chocolate. It is a Canadian product. Here is the website. https://www.naturalkitchendelights.ca/ BUT they only ship to Canada.

I search the web for gluten and dairy free chocolate that I can get sent here. That's how I found NKD.. You may find something as good by searching.

NHWM - Your topping sounds very similar to a recipe I have for a biscuit style strawberry shortcake, I haven't made it for years because buying angel food sponges is easier (especially for one) but in my memory it makes one of the best shortcakes ever.🍓🍰

As promised, here is the recipe. I like it as written but I made it with peaches because that is my mom’s favorite cobbler. I love the berry cobbler!

I like this recipe because it isn’t super sweet! If you like things a bit sweeter, just add a bit more sugar in the fruit.

This recipe is from Sally’s Baking Addiction site.

Ingredients

8 cups berries, a mix of blueberries, blackberries, raspberries and strawberries. Or you can use all one berry. Sometimes I do all blueberries or blackberries. You don’t have to have exactly 8 cups. Sometimes I use a little less.

1/4 cup granulated sugar.

2 tablespoons (15 g) cornstarch

1 teaspoon lemon juice

1/2 teaspoon pure vanilla extract

Biscuit Topping

1 and 1/2 cups (190 g) all-purpose flour (spoon and leveled)

1/3 cup (65 g) granulated sugar

1 and 1/2 teaspoons baking powder

1/4 teaspoon salt

6 tablespoons (85 g) unsalted butter, cold and cubed

1/2 cup (120 ml) buttermilk, cold

Extra:
1 tablespoon buttermilk plus 2 tablespoons course sugar.

This is brushed on top of the biscuit topping before baking. It will give the top of the cobbler a sweet crispy crust.

Instructions

Preheat oven to 350 degrees (177 C) and butter a 9X13 pan.

I don’t use a 9X13 pan because I like a thicker biscuit topping, so I use a 8x8 pan. Or something close to that. It doesn’t matter what the shape is. It can be square, oval, or rectangular.

Filling:

In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice and vanilla extract together. Spread evenly into pan.

Topping:

Mix flour, sugar, baking powder and salt together in a large bowl.

Using a pastry cutter or fork, cut the butter into the mixture until it resembles course meal (pea-sized crumbs). You can also use your hands to mix.

Add the buttermilk and mix together. Form a ball. Grab a handful and flatten it out. Place flattened dough onto your fruit until fruit is covered. Every part of the fruit doesn’t have to be completely covered if using a larger pan.

Brush the top of biscuits with the small amount of buttermilk and sugar. Don’t worry if you don’t have course sugar. Regular sugar works too.

Bake 45 to 55 minutes until golden brown. Stick a toothpick into biscuit. If it comes out clean, it’s done.

Let cool for five minutes and top with ice cream or whipped cream.

Cover leftovers and place in refrigerator for up to four days.

Enjoy!

My husband loves this recipe. He is like I am and doesn’t like super sweet deserts. This recipe allows the natural flavor of the fruit to come through.

Send, the chocolate with lavender and blueberry sounded so go. I wonder if you would let me know where you buy it. I looked at a few stores but could not find anything close to it .I like the idea of eating just one piece after dinner, seems so satisfying at that.

She loves peach cobbler! She ate part of it. It was a nice visit but she was tired. We face timed with my daughter. She lights up when she sees her. My daughter showed her the dog. She said he was beautiful.

cweissp, yummy danish pancakes!!!

I can only imagine how delicious the ones your grandma made were.

I never had homemade but, when I lived in Vegas there was a hole in the wall restaurant that made pancakes from around the world. I sure missed them when they closed.

Currants sound great in them.

Ooh, ebelskiver, I haven't had that since my grandmother died. The the one asking what it is; they're a dough with currents (grandma's anyway). They're made in a special pan that look like half a dozen or so half golf balls spaces the dough goes into. To me they taste on the order of a pancake. One of my cousins got the pan. We were messaging about it just recently. It's a Scandinavian dish. Grandma made in Christmas eve when we all got together. Besides Grandma, one of mom's sister's family lived in the area also.

Me, I avoid cooking whenever possible, but lately I've gotten rice papers and make my own version of egg rolls and roll up salad in them.
