Had the tiniest hamburger patty I ever made, like, where's the meat, lol.
On a burger bun with my secret sauce, artisan romaine lettuce leaves, grilled onions (no pickles), and deli swiss cheese.

Tonight must be hamburger night.

I make some version of hamburger soup often Msharleyb, it's infinitely adaptable. Add in some kidney beans, a tin of diced tomatoes and pasta and it's minestrone, toss in some barley and beef broth for easy beef and barley soup, or make it Mexican style with taco seasoning, or just changing up the veggies and spices can give it a different flavour profile.... Yum!

Homemade soup (kinda ;) ) brown hamburger in pot, do not drain! Add frozen veggies, frozen flavored potatoes, whatever spices you like, let simmer. I throw a bit of ketchup in. Brown some rolls, voila!

Ate a salad with Atlantic smoked Salmon from a package. Salmon was salty.
I don't yet have a real diet plan, but followed dinner with easter-candy dessert.

I have already limited myself to one egg only, and need to cook eggs separately
from Dh now.

If I call it a "diet", I will definitely self-sabotage. Salad and I do not usually get along. But not going to panic, yet.

I could be wrong about the association, but if I eat only a salad, or only something very healthy, I cannot go to sleep. So when I was awake from 3 a.m. that is when I tried the candy. Sheesh.

Hello Sendhelp. Good luck with your diet. It is a good time to start with the warm weather and all. I wish you great health and success with reaching your goal.
I have started mine a few weeks ago, but did not do well. Getting off the sweets after a year of baking and consuming them is not easy for me. I gained ten pounds over the year. I am going to try again, walk every day which I just recently started, eat more fruits and vegetables, green salad and beans for a start. Keep us posted. It is nice to see someone else on a diet and reaching their goals.

It’s spring!

Our oldest daughter came over today. We packed a nice lunch and ate at a nearby park.

We weren’t hungry for dinner.

My daughter and husband enjoyed a dish of ice cream instead of dinner! I drank a cup of tea.

A perfect spring day! I made a gallon of marinade from apple cider vinegar, salt, pepper, paprika, garlic, onion, a few red pepper flakes. Marinaded a pork tenderloin for about 6 hours. Cooked at 325 until done and tender. Finished off on charcoal grill. Sliced on bias to serve. Covered a roasting hen in plain yogurt with a few spices and roasted. The yogurt keeps it moist and tender.Had a green salad and cucumber salad, roasted whole green beans. Homemade French bread. Cheesecake with blueberries. Good company that we hadn’t seen since last spring.

I’m in an eating slump. Nothing sounds good to eat and can’t decide what to cook. We stopped at nearby town that has Chinese. I had cold sesame noodles. My husband had chicken and broccoli. Maybe my slump wil be over tomorrow.

Dinner was a bun-less hamburger and baked beans followed by - ta da - a square of blueberry lavender chocolate, It was decadent. The chocolate is rich and dark, , with dried blueberries in it, sweetened with maple syrup and when I was just about finished my square, just the right amount of lavender flavour came through.

Ahhh, heavenly. I don't need anymore today. I am still enjoying that piece. It is not cheap but well worth the $$$.

You could have made corned beef dinner and just made yourself a small amount of cabbage in a different pot! I cook my corned beef in my slow cooker and in a big pot I boiled my potatoes, carrots, and cabbage in chicken stock! I'm Irish on my dad's side 4th generation. My SO is Italian as well & we eat a lot of Italian food! LOL! But I still love my potatoes! 🍀

I would like to fix corned beef and cabbage to celebrate ☘️ St. Patrick’s day.

Unfortunately, my husband doesn’t like cabbage!

So, I am going to take meatballs out of the freezer, and cook some spaghetti and we will celebrate my husband’s Italian heritage.

It is funny because normally we have a few parades at this time of year (of course, canceled due to Covid) but there is one that combines both. It’s an Irish/Italian parade! It’s always a good time.

I am Irish on my father’s side. I am a ‘wanna be’ Italian though. So, I will enjoy the meatballs.

I could have a Guinness or an Irish coffee. 😂

Oh this seems easy and fun. Hi!
I prepared left over homemade meat sauce with thin spaghetti noodles and three frozen Chrispy Chicken Strips, I heated in the Airfryer. My new kitchen applicance I do like very much, next to my IP! With frozen Broccoli Florets I heated and served my DH and my dear Mom (who we are now living with and being her caregiver).
My dad passed away August 2019 and that is when we noticed things were not quite normal for my mom. He never told us so we had to figure things out for ourselves.
So now I'm here caring for my mom who was sadly diagnosed with moderate dimentia/alzheimer's in 2019.
