Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
The UPROAR, the CRISES, the BLAME! Luckily, extra crunchy has now been bought. It happily sits next to the almond butter, where they sneer at the poor unloved smooth that has pushed to the back of the shelf 😆.
Lately though, I have been eating almond butter instead of peanut butter.
I agree that cake sounds awesome - and works with my allergies. I looked up a recipe and it is similar to another one I make. Beat the eggs and sugar well first then fold in the other ingredients. Yum! Love almonds in baking.
We had breakfast for dinner tonight at our house.
I make extra just so I can make fried rice in a day or 2. It is great as a main dish or a side. Adding fresh ginger takes it to new dimensions.

I never have enough room in the freezer for leftovers overs, but I do like the idea of the 'pot luck' dinner!
I always tell my SO that he is a picking eater and I am a food snob! It is because I grew up having a Chef for a dad! He really didn't eat leftovers either now that I think about it!
- if you don't want the same thing twice in a row then freeze in serving size portions
- turn them into something else entirely: use them up in soups, stews, casseroles and stir fries
- when you have a lot of different leftovers but none of them are enough for a meal heat them all and have a"pot luck" dinner (depending on what you have a salad or some garlic bread can round out the meal)
I really never thought about having leftovers so I wouldn't have to cook everyday...hummm 🤔
It really isn't about the reheating that makes me not like leftovers. It's just once I had something I don't want to eat it again! I guess, I am one of those people that like different meals throughout the week...and not the same thing twice in one week! Of course, when I go back to work I might have to rethink this idea or should I say, rethink about my view on leftovers! LOL
I had to figure out how to eat leftovers. I found that the key to enjoying leftovers is how you reheat these. Microwaves are for heating water at our house. Depending on what I am heating, I use steam, toaster oven or a frying pan. Believe me when I say it makes all the difference in how those leftovers taste.
Now I know how to cook and I intentionally make enough to feed an army, that way I am not cooking big meals everyday to feed my hungry man. 😁
I have never been one to eat leftovers; however, when my dad was alive and cooked I was aways happy to eat his leftovers...maybe for me it is a mental thing and maybe I just thought my dad's leftovers were better than mind!
In my kitchen, leftovers make the world go round! I purposely make extras of certain things - just to have some left for another time. I have a family member who refuses to eat leftovers - she doesn't know what she's missing.

I am baking the squash. Dh has a 'recipe'. I think I put the squash cut side up, and the recipes I saw said to place the cut side down and add water. He's got this I am hoping. The cooking smells coming from the kitchen is amazing.....all that seasoning salt, Lol.
We have both put seasoning salt on the squash halves, so I left it to him.
There are shredded carrots and zucchini in his recipe, no meat expected.
