I go back to work Monday after a week off ( yay me!!) Hubs is going to make a pot roast so I have leftovers for lunch, Looking forward to that tomorrow. Just grazing tonight. He had to run to a neighbors house today to help out her Mom, who is housesitting while the girls are away. Its an older home and she plugged in 2 space heaters,, blew the fuses! He got me some sour cream doughnuts.. OMG are they good, I think he is trying to fatten me back up...

Polarbear, I buy thin sliced meat at the Asian market, so maybe an 1/8 thick. After I tenderize the meat, I lay it out flat and add the onions to one end, almost like a burrito but closer to the edge, then I tightly rolled the meat, it looked like a cigar. Because there is average of 4 complete rolls everything just holds together. The meat being thin and large enough for multiple rolls is the key, I think. I probably did not need to tenderize it, I just started and was prepping it to velvet it before I put my brain in gear.

Then I BBQd them on a grill mat so they were not droopy at any point and I could easily roll them over to cook without fear of them falling through the grate.

The meat is so thin that I had 40 pieces from a pound of rib eye roast. Pieces are roughly 4.5 square. I did not use anything that was much smaller because I couldn't get the rolls to hold as well.

Baked chicken breast with a drizzle of sauted shallots with lemon and sour cream. Steamed asparagus, Trader Joe's farfale and spinach, and fresh tomato and avocado slices. It was delicious...so sadly, no leftovers.

I am having carmelized onions wrapped in thin sliced beef, lightly coated with homemade bbq sauce, jasmine rice, kimchee and sauteed bok choy and garlic.

Fingers crossed it turns out, because those beefy onion rolls are time consuming and took 2 days to prepare everything so it could be handled without burns.

I'm having some canned vegetable soup that I pepped up with added veggies, lentils and a bay leaf. This balances the Dr Oetker pizza I had for lunch. (Yes, I mean pizza and not slice of pizza - I ate the whole thing 😲)

Pam, the bean salad sounds much healthier than what I consumed. I love bean salad. I am totally disgusted with my eating habits since the pandemic started. Finding it so difficult. My stomach feels like one big dough ball tonight.

earlybird that is hysterical! I made 3 bean salad this week,, I know it is sort of a summer recipe,, but what the hay.. I wanted it! Makes a ton,, and so far it is going well with the 3 lbs of chinese my hubs got!

Diet is going great. Made 24 buttermilk biscuits from VT Country Store book recipe I received for a Christmas present from my brother. We inhaled all 24 of them for dinner. We did have a bowl of homemade vegetable bean soup, though.. Oh well tomorrow is another day.

Is this really real,, we just use boxed mac and doctor it up with extra cheese! Our DD would only eat boxed mac when she was younger. Today we are expecting another snow storm,, hubs bought chinese.. lots of chinese.. we will be eating it for days. But I am ok with that ! He is even laughing about how much he got..

We had grilled lobster tails and salmon. My brother cooked it. It was delicious! Moms special Valentines Day request. I have to shake my head and roll my eyes at her though (and laugh). 2 days before I got here, I asked her if she wanted me to bring anything (I am on the coast. Lots of goodies I can bring her). She said “no I can’t think of anything”. The day I got here she tells me how much she would love a lobster tail. She said my dad got a Valentines Day lobster dinner promo special from the local casino (on holidays they have promotions where card holders get a free dinner and $20 free play) and he asked if she wanted to go. She said she didn’t think she would be up to it after having major surgery but maybe we could get lobster tails and cook them here!!! SMDH!!! I could have brought huge fresh lobster! You can’t get fresh lobster in this part of NV. Anything in the grocery store is tiny. I ended up getting previously frozen Maine lobster tails from Costco. And there are no fish markets here. If she had brought up the lobsters 2 days earlier I could have gotten huge fresh lobster tails! That’s one good thing about living where I live. There is plenty of fresh seafood and outstanding produce. I bought salad mix here in NV and it looks pitiful. Nothing like what I get in California!
