It is apparently Pizza day, so DD came over and hubs got a carry out pizza and wings, and I made a big salad. Nice change of pace. I also baked 2 loaves of banana bread with choc chips.. send one home with DD and the other is for my BFF who I work with, to thank her for letting me stay at her house with her this weekend.. we were supposed to get snow,, nope never happened in Baltimore, but we had a nice sleepover!

Here is the recipe that I found on line that is super easy and really good for Granola. I must warn you, it makes a big batch and you may find that you can't stop eating it!

I saw a recipe for a spinach lasagna with a white béchamel sauce, instead of the tomato sauce.

It looks good. I want to try it soon.

The only thing I will modify is the noodles.

The recipe calls for no bake noodles which I am not fond of.

I have to add some humor to your title (question):"What's for Dinner?" After my dad retired, he truly could have one bite left for breakfast, and he'd ask my mom, "What's for lunch?" My mom told me that she married my father for better or for worse, but not for lunch. (Her relative dislike of cooking was shining through then.)
When my mom got Alzheimer's, I was her "lady-in-waiting," I had made (or should I say "maid") salmon for everyone, and she said she didn't want that, (although it was one of her favorite meals). She wanted chicken, but I didn't have any at hand, so I decided to "wing it." I gave her some other options, (like soup and a sandwich) but she didn't want that either, so I hid her salmon under some mashed potatoes, and she said it was delicious. "No harm no foul," (fowl) or, no luck no cluck. I even wrote a book about my husband and I taking care of her, laced with humor called: "My Mother Has Alzheimer's and My Dog Has Tapeworms: A Caregiver's Tale."

Detox drink: Recipe: DR Josh Axe
Nourishes body with antioxidants for increased energy, drink before breakfast or lunch daily. Body cleanse 3x a day 20 minutes before meals for two weeks

16 OZ warm spring water
2TBSP apple cider vinegar
2 TBSP fresh lemon juice
1/2 tsp ground ginger
1/4 tsp cinnamon
dash cayenne pepper or ground red pepper cayenne
1 tsp raw honey (optional) I like the taste better with honey
mix all ingredients serve warm or room temperature
48 calories
11 gm carbs
6 gm sugar

Benefits I notice since consuming drink for a few days.

Old Fashioned Stone Ground Corn Bread
recipe by Indian Head

1 cup corn meal
1 cup flour
1/2 cup turbinado raw cane sugar or dark brown sugar
1TBSP baking powder
1 tsp salt
1 cup milk
2 large eggs, beaten
1/2 stick of unsalted butter, melted
1/4 tsp vanilla
1/4 cup raw local honey
2 TBSP orange juice per poster on this site
Preheat oven to 400 degrees
Bake 25 minutes or until golden brown
cool slightly

Combine dry ingredients and whisk
Whisk wet ingredients until well blended
Combine the wet and dry ingredients and stir until just blended
Pour batter into 8x8 buttered pan
Bake 25 minutes or until golden brown
Serve warm

Fun food day! My husband and I drove to Columbus to take care of some business. We went to our favorite Italian restaurant for lunch and stopped at Amish store to pick up baking supplies. I always find something new to try. Then a stop at a big quilting supply store. Now overnight at my cousin’s home. We’re going to play canasta with her and her husband and her adult grandchildren and two daughters.

Shell, I recently started making corn bread and it is delicious and moist. I would recommend the brand Indian Head Old Fashioned Yellow Corn Meal, recipe on back, instead of regular sugar I use Turbinado raw cane sugar similar taste to brown sugar, add a tablespoon of orange juice, recommended by a poster here on this site. My family loves it and does not last a day. Great with Chili or soup.

Yes Cwilly, you can have 2 muffins. I only say that because when I make banana bread, I eat a whole loft by myself! LOL

Making granola is pretty easy and cheaper. Plus, you can control how much sugar you put into it. I have been making a batch every week!

Grilled plums are good too! I grill them every year when my SO & I are camping, but he doesn't like fruit of any kind except for bananas.So, I eat them by myself.

Early, I love blueberries. They are my favorite fruit, however, I can't drink anything with blueberry juice because it makes me so sick that I wish I was dead. Doesn't make sense does it?!
