We’re back on the road. Headed west to husband’s brothers home in Gulf Shores AL to visit thru the weekend. Weather is nice and warm. I had a big breakfast and had blueberry coffee for the first time. It was good.

Pam, it's one of my go-to dishes - so easy. I added the shrimp this time as I didn't have enough cod. Tonight was salmon in white sauce with peas and rutabaga whose flavour is stronger just boiled, so I will go for mashed or roasted next time. Root veggies suit me very well. I am managing with little red meat which is supposed to be healthy.

Golden that cod sounds wonderful!! We ate alot of fish before mom and dad moved in,, they only liked it fried.. so we need to get back to our healthier eating

I too have that can't throw the leftovers out mindset but am doing holiday prep cleanup today. 'Last chance' dinner leftovers then out it all goes...

I made WAY too much Chili (which the partner, with his GERD can't eat) and way too much spinich and artichoke pasta (which the partner, with his dislike of spinich-- "It's slimey"-- won't eat. So it is leftovers. And leftovers. And leftovers. For the chili I can add noodles one day and rice the next. For the pasta it is becoming very difficult to recreate it anew. And I fear I have caught my Mom's depression-era inability to waste food. So for the duration it will be pasta-chili-pasta-chili. At least I am not masking up to shop!

Cod and shrimp in a tomato sauce with garlic, green peppers, oregano and red pepper flakes. I ate it with left over mashed cauliflower. It was good!

Thank you - he enjoyed it thoroughly especially when I served the Sparkling Wine in our wedding champagne flutes.

We haven't had the cake yet - we're letting our tummies settle down a little bit and will take Chloe for a walk first. She had her 14th birthday party yesterday and I got out a pretty, hot pink birthday plate and put an assortment of her favorite treats on it! She did get a couple of super tiny pieces of the filet as I don't really like to give her too much table food.

I will tell my husband you wished him a Happy Birthday too.

Hope you and mom are doing good as I've been wondering if everything was ok!

"Bridger,"

Your dad ordering the car for your husband sounded so bittersweet - that made it all the more special since they were best friends for years.

My husband was best friends with my dad and when he passed away in 2004, it was extremely difficult. He didn't get a car but he did get my dad's keyboard, which they spent so much time playing. My mom gave it to him as a birthday gift years ago and it now sits in our dining/living room area.

We had a nice dinner, cake, etc. car was delivered. My dad ordered the car. My husband drove dad everywhere, plus they were best friends for years. Dad thought they would look good driving around in a sports car. Mom didn’t approve. So I guess I’ll get to ride around in the new Mustang.

Taking my husband out for his 66th birthday. Sons are coming to bring cake and ice cream. He doesn’t know it but he’s getting a new car too.

Since my husband is down about having another birthday today, I'm making filet mignon, steakhouse baked potatoes with sour cream, cheese blend and chives, petite shrimp w/cocktail sauce, sauteed zucchini with melted cheese, garlic knots, red grapes and sparkling wine - all as a surprise.

For dessert a marble cake with vanilla buttercream frosting and coffee.

Now that should "cheer" him up!

I love mushrooms but they are expensive. So, I was so glad to find big 2.5 pound sliced mushroom packages for $6 each at Costco. Very inexpensive and ready to cook. What more can I ask for.

Now, I can generously add mushrooms to my omelettes, stir-fried dishes, pasta, soup, etc. Yummm... I'm in heaven.

Nice sunny day here. Husband grilled shrimp and veggies. I baked French bread and a pecan pie. Youngest son and a new girlfriend ate with us.
