Split pea soup tonight. Something that the Partner can make and he's good at it. Something we both can eat, and that's a positive, too. My Mom used to make something called croutons for it, toasted and buttered bread with crusts cut off, cubed and put in at the last minute. For me I love potato cubes cooking in at the end, and sometimes add a bit of crumbled bacon over the top; not so much into the ham hocks.

Hello NeedHelp,
The texture is quite crunchy and more like a flatbread and makes it a good alternative to regular pizza crust. It has a nutty earthy flavor. More healthy in my opinion.

EB,

Have you tried cauliflower crust? Is it crunchy? What’s the texture like?

Golden, I was in Whole Foods and found a cauliflower pizza crust in the cold section with other foods such as quiche and oven ready made pizza. It looked quite good and is gluten-free.

Creamed tomatoes - a can of tomatoes and juice. Chop fairly fine. In medium saucepan heat, add 3 tablespoons butter heat until melted, stir in 2 tablespoons flour, 1/4 cup milk. Salt and pepper to taste. Stir until well blended and thickened. Serve over biscuits. Cheap and easy.

Then here's another one for you, pamz. Mother once showed me how to make a tomato dish that one of her Norwegian friends made. We took a medium sized fry pan and gently fried sliced onions in a little oil till caramelized. Then we poured a can of diced tomatoes into this and stirred til all was heated through and cooked down a little. Then mother instructed me to add a little sugar (a spoonful or two) which we did and tasted till it tasted right. It was good and very easy.

I had canned maple beans and corn chips for supper. Easy peasy.

Black beans and rice with Mojo sauce. My daughter got the recipe from some guys she plays video games with who live in South America. And homemade applesauce which is almost like apple pie filling because I like it chunky.

One of my hubby’s favorites, lasagna! He’s Italian 😊 and French. Good combo!

I am such a wannabe Italian!

eb - I haven't tried it but it would be worth trying. There are some recipes now that are dairy free. Thx for the reminder.

Golden, :(
I had a pizza like that once..
I think the cardboard box it came in looked (& probably would taste) a lot better... At least it was leaner 🙃

That is sad Golden~
I remember eating things I used to love too.
This getting older stinks.

Sad to report I had fake pizza - the only kind I can eat - gluten free, dairy free. It more or less looks regular pizza, tastes a little like regular pizza but lacks the textures of regular pizza. But I felt like pizza and it is my only option.

I used to make pizza from scratch, even made my own tomato sauce. Ah, the good old days...

Glad, the tuna sounds so good too. I am going to try both. Need something different. Thank you!
Llama, that sounds a bit like salmon pie without the crust. I am going to make it very soon. Let you know how it turns out. Thanks!

EB, mom used to make tuna with peas. The gravy was simply a white sauce, milk and butter, salt and pepper, with a bit of flour of corn starch to thicken it. Wonder how it would be with salmon. Always served on toast.

EB: To the best of my memory (this is going back 65 plus years ago), my mother used a can of salmon and mixed it with canned peas (not frozen). I think she had a side of mashed potatoes to make it a creamy consistency. It really wasn't my favorite meal, but as I say, we ate it lovingly.

My mother's main staple meal in the 50s and 60s was creamed salmon with peas. Sounds pretty gross now as I think about it, but our family ate it lovingly.
