Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
I am so glad that you are doing better. Roasted eggplant and the portobello mushrooms sounds good, although, not sure what rutabaga fries are. 😋

I was roasting rutabaga fries, eggplant and portobello mushrooms this morning.
Dinner:
Baked buttermilk crusted haddock, creamy buttered mashed potatoes, peas and carrots.
Dessert:
Mint chocolate covered cookies with hot
peppermint tea.

I'm giving my Dutch oven cookware a workout all the time lately. I find it such an easy way to make meals. Put any meat in, add veggies and/or broth, and it always comes out as a yummy one-pot dish.
(Even if you can't eat I hope you are enjoying your weather, it looks fantastic!)
Cheesy pasta with hamburger and calfower and fresh dies tomatoes on top. Needed to make something quick and easy.
Golden, I am sorry to hear about your gut being upset. It makes it hard to figure out what you should eat. My guts get that way to from time-to-time. However, apply sauce sounds good right now.

That sounds yummy too! My youngest daughter makes nachos.
I think that was a fairly easy thing for her to make and munch on when she was doing her schoolwork and studying for exams.
She moved to Denver and misses New Orleans cuisine.
She called me and told me about a couple of restaurants that serve New Orleans cooking!
She says it is authentic Louisiana dishes because the chefs are from New Orleans.
We just happened to have our style nachos last night: beef mince, red beans, chilli flakes, grated veggies on plain corn chips with salsa, sour cream & mashed avo.
I'm going to try a more Louisiana red bean version next week :) thanks!
I had almond butter and maple syrup in my oatmeal this morning. Yum!
They smell really yummy cooking away in my kitchen.
