There is a Cuban restaurant near me that does fabulous black bean dishes. They use seasonings that are perfect for black beans.

He made, peanut brittle, pralines and divinity candies that were divine!

All this pumpkin pie talk on the forum inspired me to finally cook up the pumpkins I had for autumn decorations and I've got some muffins in the little oven, the rest I divvied up and put in the freezer. For my supper I have some leftover mac & cheese and some baked beans, and of course there will be a muffin (or two) for dessert 😊

I cook bacon in the microwave with lots of paper towels, but that probably only works for small amounts. I like mine really crisp.

Tonight supper was homemade spicy black bean soup perked up with lime, and oven roasted rutabaga fries. I made crispy tofu for lunch and roasted butternut squash and it was good!

I love cabbage too - raw or cooked.

I cook bacon in the oven. Place on parchment or on rack. Always save bacon grease.

I have never tried bacon in the oven.

I bet it is better than microwaved bacon. I don’t nuke it.

I usually fry it, then drain it. Will have to try baking it.

Earlybird.. we still save the bacon grease for things.. LOL Old daughter of a farm girl!. My DD dips her sausage in maple syrup.. I just can;t! Luckily Hubs does most of the cooking these days.. he is retired and really getting into it!

If you are cooking more than one or two slices of bacon then the oven is the only way to go - no more trying to fit everything in a round skillet, no more spatter. Use a deep pan though so there's no chance of overflow or spillage.

Hi Pam,
I never thought of cooking bacon in the oven. Might try it with eggs and French Toast for a special treat, I used to like to dip my bacon in maple syrup as a kid. My dad used to cook his eggs in the bacon fat and it was really good. Things have changed since the earlier days and we all eat pretty healthy most days in our household. Happy Thanksgiving. Enjoy your day tomorrow. Just think not so much clean up.

Earlybird, hubs makes our bacon in the oven, then drains it on paper towels. It gets rid of alot of the grease.

We are having salmon cakes with mac and cheese,, must be salmon night!! Tomorrow will be our thanksgiving meal as I work Thurs and Fri. Going to be strange with just 4 of us,, thanks to Covid and FILs passing. A friend will be stopping by to get me something G missed at Costco and she knows what the heck I was talking about.. G told her if she stops by she has to eat.. LOL

cwillie, I love cabbage alone or added to soups and veggies. I love bacon but usually get the meatless one. Too much fat for me but love the smell of bacon and eggs cooking in the morning. My father used to love his eggs and bacon for breakfast.

I'm not keen on salmon but the rest sounds yummy earlybird.

I'm doing a potato, some cabbage and onion boiled together with a couple of pieces of bacon - doesn't sound like much but it sure smells good!

Yes, it is. It’s a basic dressing recipe.

I like the shrimp stuffed peppers occasionally. Most of the time I do the ground beef with rice.

I don’t cook the rice. It’s always cooked when I take the peppers out of the oven. Do you use raw or cooked rice? Do you only use green peppers or use other ones too? Sometimes I use red, orange, yellow and green!

Some people do use cooked rice. Works either way. I like my peppers cooked fully for stuffed peppers.

Otherwise, I don’t like mushy veggies either.

How is the shrimp stuffing made? Is it like regular stuffing but with shrimp?

Yes, I do the ground beef peppers just like you do.

The shrimp one is done with a shrimp stuffing or in the south we call it ‘dressing.’ It’s better to have peppers cooked ahead of time for the shrimp because otherwise the shrimp would overcook.

I don’t precook the peppers when I use ground beef. My mom used to par boil the peppers. I never did that with beef. With shrimp I do.

It’s a common dish here. Very easy to make but sort of like our gumbo. Everyone makes it their own way!

I love stuffed peppers! What stuffing do you do?

I do either ground beef or I do a shrimp stuffing.

We watched the Saints play the Falcons. I hate that Drew was injured but this starter player is fantastic! We won the game.

I felt like BBQ so my husband grilled burgers for us. They were yummy!

Roasting vegetables today. Rutabaga oven fries, butternut squash, purple potatoes. I have buttercup squash too and really like it. I cut up the rutabaga and roast some and keep the rest in a baggie in the fridge for roasting later. They keep quite well. I prefer working with the original veggie rather than getting frozen veggies. There s something "grounding" about the feel of them.
