Went to a chamber dinner with a magician as entertainment. It was fun. Lots of Italian food on the buffet, lasagna, fettuccini spaghetti, even mini calzones. With German chocolate cake for dessert. I won't need to eat now for a few days. And those pasta carbs making me sleepy. Night, all.

Chopped 5-6 stalks of celery, then cooked them up in pan so they soften up a bit. I buttered a M/W safedish/with a lid.... Layered in some chopped pineapple, added about 1/3 cup of dried cranberries that I had allowed to soak in some hot water, but drained it. Then layered in 6 slices of chicken cut from to chicken breast pieces. I have 1 cup of rice steam cooking in 2 cups water, with some salt & butter. Gonna go see how it all turns out now. Smells great at the moment.

TN,

You and I get that food is very much part of the culture of a vicinity. People who eat in fast food chains obviously don’t get that. So glad you were able to experience eating at many different places.

One of the things I loved most about my traveling job was the opportunity to "taste" all the different regions and ethnic foods on someone else's dime. I cannot imagine traveling and only eating the same chain food stuff I could get anytime at home. Although I will admit to having repeat visits when I find a restaurant I like to sample the different offerings. Some of the best meals I have ever eaten came from small local and often inexpensive restaurants. #1 experience was visiting a Jewish deli in Connecticut with a co-worker - the real food was very good but pastries and deserts were absolutely out of this world. Although I have visited delis in Knoxville and Nashville, they were not nearly as good (not sure if that's more because they are not around or I just don't have a local friend to point me in the right direction).

cwille,

I had to look up peameal bacon. That is very different from our bacon. It looks good though. I love trying regional foods when visiting somewhere.

Years ago, my husband and I went on a trip with friends. Oh my gosh, we both said that we would never travel with them again. The only place they wanted to eat was McDonalds! My husband refused so we ate separately the whole trip!

Why would anyone do that? They were extremely frugal! Downright cheap! Why go to other places without trying their local dishes? That’s part of the fun!

Ina Garten showed a recipe for a make ahead french toast casserole with raspberries in the middle. Cut up the bread, put the custard on it and let it be in the fridge overnight or an hour or two. I'm doing it without the berries later this week.

Snow creme is an ice cream like product made with milk, sugar, salt, vanilla and snow. It's been a family tradition for at least 8 generations. Dissolve sugar or honey/syrup in milk, add vanilla and salt, then stir in snow until the an ice cream like consistency is formed... and eat before the snow has a chance to melt! As soon as the snow is deep enough, you send the kids out with a large bowl and a spoon to "gather" snow from flat surfaces (usually cars and porch railings or furniture), leaving the bottom layer on the surface so you only collect clean snow.

My great-great-great-aunt (grandfather's aunt) told me about making snow creme with maple syrup when she was a child traveling by wagon to Oregon and kept _real_ maple syrup to make snow creme as long as she kept house. Last week, I made a batch with maple syrup and a batch with sugar. Back in November I made a batch with honey. It's all good, but the different sweeteners give a little variance in flavor. I have used chocolate syrup or cooled cocoa to make chocolate snow creme too.

Kat,

I love homemade chili. I never cook it because my husband doesn’t eat it. Do you do it on the stove or crockpot? Is yours spicy or mild? Beans or no beans? Are there prizes at your church for the winner? Now I want homemade chili. I love chili in a baked potato or an omelette. Yum!

Italian meatballs are important to be cooked the Italian way.
Including the grated parmesan and romano cheeses, cooked slowly so the cheese is not burned.

I gave up ordering pizza and meatballs /w spaghetti from the Italian restaurant because the meatballs had lunch meat/salami in them. I could tell by the taste.

However, if I ever make my own meatballs again, I might try a little pumpkin for moisture. Sounds good to me. And, I am not Italian.

We had snow on Thursday with the kids out of school, so they showed up at my house (carrying a gallon of milk) for snow creme and dark chocolate cocoa with marshmallows. Apparently you need hot cocoa to warm up from gathering snow and then eating snow creme.
