Where does chicken and waffles come from? I hadn't heard of that combination until a couple of chains added it to their menus. We always had chicken and gravy or chicken and biscuits.

Have you tried it? The pumpkin in meatballs. I am married to an Italian so I do traditional meatballs. He loves his meatballs.

Years ago, I was a newlywed and I told my husband that I would make him meatballs and I was out of breadcrumbs and bread to make my own.

I was tired and didn’t feel like going to the store so I made meat sauce instead. Poor baby, he never complains about anything but I could see that he was disappointed so I made him meatballs the next week to make up for it.

Need - it was canned pumpkin, obviously not pumpkin pie filling. I would probably cook a pumpkin and use it if I could get one this time of year. Other squash could be used I am sure. The cooking show host mentioned it added moisture. Yes some recipes use apple sauce for moisture and/or instead of a fat.

cw - just quoting what the show host said. It is a starch and has fiber as isitreallyreal said.

I have made meatballs without breadcrumbs, just adding a little cornstarch or other gluten free starch to bind them. It works well.

Pumpkin bulks it up, same idea as bread crumbs. Adds fiber with a neutral flavor.

That is the concept anyway.

I guess it adds moisture too. Don’t some people use applesauce in baking to reduce fat? Plus it’s supposed to add moisture.

Watching a cooking show which I don't do often as my allergies limit me from trying most recipes; however, I just saw a tip I like - adding canned pumpkin instead if breadcrumbs to meatballs made with ground chicken. You could add the usual stuff - garlic, onion, etc. I'm going to try it. I have made spicy skillet ground beef and pumpkin which was very good.

No Subway at the laundromat, but part of my plan to get out more often is to take the big stuff (comforter, towels, sheets) and promise to feed hubs on the way. It is more of a desperate attempt to regain control of a schedule that has gotten way out of hand, and we get so far behind.

For example: Subway 30 minutes, laundromat 2 hrs. vs.
Doing laundry all day, at home 12 hrs. and never finished...

It is working overall, because what can he say, after all, when he has not yet been fed, and he's been gone so much there is no food in the house??

Don't answer that, it is a rhetorical question.

You have subway at the laundromat? Years ago, all we had at the laundromat was a drink machine. Now there are laundromats with a bar, pool tables, burgers and a live band!

I have had a washer and dryer for 40 plus years now but when I was single and went to the laundromat they were so different, very simple.

I love feta cheese too. It is salty though. It is fun to make a recipe our own. Your daughter would appreciate your creativity. She sounds like a great cook! I like goat cheese on pizza. I actually don't like mozzarella cheese a lot. The texture can be a bit rubbery. I love provolone or fontina cheese on pizza. Fontina melts beautifully.

My daughter, graduate of Culinary Institute of America (now radiology tech), made it for us last week, with feta. It’s quite salty, so I tried goat. Loved it!!

French toast casserole is basically just a bread pudding Luckylu. I like the savoury versions too with meat and cheese, there are so many variations. When I lived with sister's family we always seemed to have too many buns going stale so I made strata often, it was a great way to fill up hungry boys.

Today it was breakfast for dinner - french toast casserole, bacon, cottage cheese and a bowl of cantaloupe and grapes. Yum, I could have eaten all the bacon and the whole casserole, but I managed to restrain myself.

Nothing smoking tonight 😆

I've got some soup out of the freezer but my crackers were a little stale so I popped them into a 400° oven to crisp them up. Then I sat down to check AgingCare. Oops.

Turkey necks and sauerkraut.with caraway seeds. Blackberries, coffee and chocolate for dessert. Actually I had dessert at lunch -a small wedge of a 6" gluten and dairy free tiramisu cheese cake. It was good. They make a chocolate chocolate one and also a pumpkin one and a blueberry swirl. Haven't found the blueberry one yet but the chocolate chocolate is top of the list without question. The tiramisu is good. the pumpkin not so much to my taste and I like pumpkin. . I expect the blueberry is likely OK.

Chipotle black bean Veggie burgers, Brussel Sprouts (sautéed) and home fries made with sliced Yukon gold potatoes and sweet potatoes. Red wine too.
