I’m sick. I never get sick. But Sunday evening I started feeling really bad. Can’t breathe. Sneezing a bazillion times, headache, grrrrrrr. So whatever is easy to fix for mom is what she will get and she better not complain either.

I love hot tea when I feel bad.

My husband loves stewed chicken. His mean grandma made a great one. She was the type that if I asked for the recipe she left out ingredients so no one else could make something as well as she did. I stopped asking her for recipes knowing that I would only get a partial recipe.

So so I had to learn certain recipes on my own. My mom didn’t cook that dish. Not sure why, it’s a great dish.

Defrosting a family pack of chicken legs and thighs for supper tonight and extra meals ahead. Half of them will go towards chicken stew with tomatoes and the other half will get roasted. In the fall weather we have been having I am seriously looking forward to chicken stew!!! If R was here I would make dumplings for him, but I don't need the carbs. Stir fried bok choy, which needs to be used up, and roasted spaghetti squash will do as a veggies with the roasted chicken.

Not sure about dinner tonight, I think Hubs is making Lobster bisque from a can with a steamed lobster, and doctoring it up ( not a fan of lobster, but I love any kind of soup) I however, have 2 loaves of chocolate zuchinni bread in the oven,, banana bread is next!

Hong Kong style street noodles with veggies and beef. It turned out pretty good. My husband liked it, oldest daughter liked it, too. Young daughter is allergic to veggies. Nah, she's not, she just doesn't like 'em. Wish she did. Right now, I have to puree and hide vegetables in her food.

Mom wanted Pizza, well actually she wanted sheese breadsticks, So we all had pizza, my usual pineapple, crushed peppers and cheese, DH and his double pepperoni, extra sauce, extra cheese, Ab and his combination.
Everyone had a salad as well except DH.



Send- I make our communion bread.
Sorry it did not work for you. I have not had an issue yet so if you ever try again and need any pointers I can assist.

I will never bake bread again after the epic fail of attempting bread for communion. The women who came to help...no one knew how to bake bread.
The next day, I asked the pastor to not serve it, and he shut me up.....
Later, he was trying to break the bread to serve communion......hard as a rock!
What a grouch!

PB- thanks for asking. It went nothing like planned but I think it worked out better. Only a few people came and that was good as it wasn't overwhelming for Mom or any of us and two people visited with her for about 5 hours.
She was surprised by the two as she never expected to see them again and they had a lovely visit.
I did not have too many left overs, so that is good and the soup and salad went over great. As well as the pigs in blanket and cake.
Ab smoked the hotdogs I used in the pigs in blanket so Dh said they were extra good that way.
I am relieved it is all over and Mom had a good day. Now she is looking forward to Monday her actual birthday, and chinese food and dominoes.
Then I owe her a road trip later on in the year.
But for now, I am kicking back relaxing and relieved she had a good day and resuming back to real life and I have a few days of less stress before going back to work.
Sorry I got on a roll writing.
Thank you for asking and thank you for your encouragement and ideas.
But next year, Lord willing, we are going to a restaurant. Yup!!!!!

They had BBQ pork sandwiches and chips with jello made with cherry juice and cool whip for desert.
I didn't eat as I just didn't feel like it too much to do and think of. So I had some rice crackers and a banana later on.


I was very with the idea of doing the party at a restuarant, so much less stressful. Then I got in touch with some of my parents old friends and they just announced to me they we gonna come see Mom, they were very excited as she will be.
So because I am going back to work I did not know when else I could do her party, because I had already chosen Saturday, and that is the day those friends said they were coming, so I just decided to try and have it here at the house, on such short notice I didn't expect anyone to come but now we are up to 9 people. Small group and that is ok with me. I havent heard back from a few of them so there may be more, however I am ready for whatever happens tomorrow. I sure appreciate all you help and ideas. Thank you

I made bread the other day, whole wheat with sunflower seeds, pumpkin seeds, dried cranberries and walnuts. Made it for a lunch pot luck. Also brought Chicken Salad and I have some of both left so tonight is chicken salad sandwich. Maybe some ice cream later. (going to thwart me for my "weigh in" on a different post in a few days!)

we somehow ended up with chicken for about 10 days straight.. a Costco roaster, fried chicken from the grocery.. you name it. Hubs made a pot roast with potatoes and baby carrots ,, I am in heaven! And I made a zuchinni casserole with tomato sauce and cheese,, tastes like pizza (well, ok, close enough to satisfy me). He also got fresh corn from the neighbors. I work the next 3 days, so my meals are ready to go!!

smeshque: Might be too little, too late - but I agree w/the advice to host mom’s b-day at a restaurant. Also seconding the choice of a casual one-price buffet, if you have the option.

Back when my in-laws had some sense, we handled a few years’ worth of special occasions like that. Someone in the family would reserve an alcove or XX-number-of-tables at the buffet restaurant.

It accommodated everyone. Including the chronically late, wheelchairs, diabetics, picky eaters, low-carbers, vegans, sweet freaks and teenage boys with super-sized appetites.

And the no-shows “only” hurt the guest of honor. (As opposed to hurting the guest of honor AND insulting whomever cooked and cleaned for 2 days to host the shindig @ their home....)

Still in hospital so I ordered a sandwich and soup from deli delivery up the street. I can always eat toast for breakfast, but lunch and dinner are so bad.

You welcome Polarbear. It is very easy and its good when it is cold out and you really don't feel like cooken. My dad use to make this when he had a lot going on! Its funny, I never like this dish when I was a kid and now I love it!

ITRR- i never thought of crushing croutons to make breadcrumbs to coat chickens for baking. It makes perfect sense. I think I'll try it.

Shell - your recipe looks very easy. And the drop dumplings in that good chicken broth sound really delicious. Thanks.

Polarbear, What about boiled chicken dinner?
Take a big pot put your chicken in and fill with water. Add season salt and parsley don't worry about the seasons floating on the top because once it starts to boil it will mix in. Add little red skin or yellow skin pototes and baby carrets 15 to 20 mins after boiling or when you feel is the right time. You can also add or use egg noodles instead of pototoes. It is done when chicken falls off the bone. This also makes a good chicken broth--just remember to stran the broth. You can even add drop dumpling at the end! This is one of my favorite comfort dishs.

Polarbear, I buy a bag of Italian croutons at the 99 cent only store, role them out with my rolling pin and coat the drumsticks in the crumbs, bake at 375 until done, about 45 minutes. They are always a hit and easy on me. Nice crispy skin, juicy chicken that falls off the bone.

Tip: I buy multiple bags and roll all of them at the same time, storing them in 1 bag and keeping the others to use for shaking the chicken in the crumbs.

Thirteen beans soup with potatoes, chayotes, and pork ribs over steamed rice.

I just bought 40 lbs. of chicken drumsticks from a Business Costco (half price compared to regular Costco), divided them into 8 bags and stored in my upright freezer. Now, I'm hunting for easy chicken recipes. Tomorrow, I'm making chicken creole. I welcome any good easy recipe you might have.
