Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
Take-out was Rattlers.
Did you ever try Woodranch?
Have you been feeling the earth shake tonight?
The Viking made that tamale pie recipe too 😂
Where was takeout - Woodranch?
When CWillie made a dinner just like her mother made growing up, it was so similar to what we siblings ate daily.
Meat, vegetables, potatoes, salad, and dessert.
So I am trying to recall some more.....
Guess what I had. Yup black bean taco. and a tiny bit of the cobbler.
Grandma- Spinach artichoke dip is so yummy. No one else here likes it so I havent had it in about 15 years. :( Maybe I will do that soon.
You think if you just add more words to tacos it will be better'n mine?
ha ha ha, lol, just joking....
Everyone knows by now that if mine sounds good and fancy, that I am reading it off the box it came in....
Do you make it?
Shell- They all said they were yummy. I have to take their word for it, I can't eat them
They finished them off for dinner. They ate all the dinner leftovers from last night.
I just had some cottage cheese a banana and a little chocolate ice cream
Smeshque, Those ribs sound good.

Guess I am rebellious at times! All through school we had plate check by the nuns. We had to eat every bite of yucky food.
This is why I brought my lunch most days. I hated the days mom was out of bread and I couldn’t have my beloved peanut butter and jelly sandwich and had to eat the school lunch.
Forget about trying to stuff the peas in the milk carton. Sister would shake the carton!
I haven't had homemade ice cream since I was a child, we would always have homemade ice cream, it was the best. So I thought I would take a crack at it. Delicious.
I had my usual black bean tacos( I am so boring, but I love them), and of course some ice cream.
Basmati rice with saffron
Salad
And
Chocolate Babka for dessert
Smeshque, I get you, I love to can and find having home canned foods to be so satisfying, not to mention delicious because the food is peak season yummy out of season. Nothing like peach pie in November or January. Add some blackberries and summer for the day.
My lasagna come in a package, Michaelangelos frozen. Because, to buy that much variety would cost more.
There were carrots, cauliflower, broccoli and other veges that can be googled.
Very good, and I am not cooking much in this heat.
online:
Italian Tip #41:The secret to our vegetable lasagna is the medley of garden vegetables. Every bite is bursting with freshness and flavor. Zucchini, squash, carrots, broccoli, mushrooms, spinach, kale, and cauliflower sit between layers of semolina pasta and ricotta cheese. Our lasagna wouldn't be complete without a traditional style vine-ripened tomato sauce and mozzarella cheese. Mangia— Let's eat!
Asian chicken salad
zucchini bread
I decided to to forgo the Tom Collins
I’m supposed to have blood work in the morning 😂😂😂
Spaghetti, salad, italian garlic bread. Strawbeery shortcake(DH favorite)
I had my usual black bean in corn tortilla with lots of veggies on top. I resisted the strawberry shortcake today. YAY! But I had a piece of chocolate :(
I canned several jars of peach marmalade, and blackberry jam. We have an abundance of peaches. So tomorrow I will be canning peach pie filling.
I actually think it is fun canning fresh food for use later. I am kinda odd. :)
But good..........................:)
