Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.

Kirkwood brand, ice glazed boneless skinless chicken thighs, 3lb bag. So tasty, so easy when cooking for one. :-)
The same brand sells bags of frozen seasoned chicken breasts, too. I'll bet those would be good. But in general, I just eat the darker chicken meat cuts because I prefer them.
In a zip-lock freezer bag, I put them in a warm pan of water to defrost, just enough to where they are still cold, but not frozen. Do not forget them, if you are not ready to cook them, refrigerate in the bag.
If you cook an entire chicken breast, it should be done (in a frying pan with olive oil) in about 20 minutes. I add ten minutes, cooked slowly on low heat because the middles may still be frozen a bit or very cold to cook through and through, and I want to be sure it is cooked, forget the thermometer, I hate them.
You can also cook a chicken breast faster, or check for doneness, by cutting them up almost done, as if you were making chicken tenderloins, which are thinner, takes less time (15 minutes).
Or, cooking for o n e person, just buy the frozen tenderloins instead.
Either way, I think not over-loading the pan helps, allowing room between pieces.
Put a lid on it, raises the heat. Soy sauce helps tenderize, but I like the taste without it too.
Think, Brown, saute, then simmer til done.
Does anybody know how to cook those frozen boneless chicken breasts so they don't end up chewy and tasteless? (I used a thermometer so it shouldn't have been overdone)
I had a couple of small slices of pineapple, cheese and lots of red pepper, and a large salad. no desert
Mom had some chicken noodle soup, she has a cold now. :( But she had some caramel corn for desert.
A friend called and she is going to stop over so I dished out 2 huge portions for the 2 of us and the rest went up the street to my Daughter and SIL and the 3 Grand kids. In return she gave me Grilled Cheese sandwiches, some salad she made and a hunk of the Chocolate cake I made for Easter dinner. (I did not want to bring any of it home cuz I did not need any of it but now that I am having company a little bit of cake sounds good!)
Even though I am super-sensitive with meds, I take so little that there is not much to interfere with. And, I take a pill, wait two hours before taking something else.
The same goes for pineapple. I have recommended it to so many for the pain of over-exertion, but they cannot take it because it interacts with their meds.
But for others, it is good to have them know that these "alternatives", whether vitamin supplements, herbs, spices, or just concentrated foods can and do have side effects, just like pharmaceuticals.
Makes one wonder why it is okay to be handing out samples of the liquid Tumeric and liquid coQ 10 at Costco! Found out that I cannot take CoQ 10 by taking a sample last year! Hmmmm? No warnings given to customers.

can you get liquid cystex ? I've had the Viking on it since she had sepsis from a UTI - only had one in the last 15 months or so
Poor hubs has a UTI with a fever (101.3 the highest). He hasn't wanted to eat (a first!) for 24 hours. I make sure he's drinking (a lot). We went to the E.R. last night, did lots of blood and tinkle tests and he was prescribed antibiotics and the Mexican equivalent of Acetaminophen. He still has a temp today so back we go to the doc tomorrow if the temp continues.
Anyway, getting to the point, I don't seem to eat when he doesn't want to eat. (I know, starve a cold and feed a fever.) But reading about all these delicious dishes, I'm having a craving for food. Plenty of leftovers (called 'sobras' here) to fill me up but not much fun to eat alone.

I'm all for holistic treatments but even herbs and plants can have side effects. Just so you know and make an informed incision.

I have a blue splash copper marans that laid very dark chocolate color eggs. Unfortunately, after the oldest hen died, this marans decided she was a new leader and she started crowing like a rooster and stopped laying eggs since. Couple of years ago, she went broody so we bought a couple of chicks for her to raise. She turned out to be a terrible mother hen. She kicked the chicks out of the nest just after 6 weeks. Poor chicks.
My Mom took care of that. :) Nobody called her child a liar. lol
I just started taking turmeric a week ago. Mine is capsule form, also with black pepper and organic. Started with half the dose wanted to make sure of no adverse reaction. Will start full dose on Monday. Glad it is working for you Send. It is the curcumin in the turmeric that is the good stuff.
But now we have chickens that live in a house out back and lay colored eggs, lol. Pink and brown, blue and olive, I even get a speckled one from time to time. And my boy, my grandson - it's his job to gather them daily. I don't think it's all that much fun for him, though, it's just a daily chore! ;-)

I am making a chocolate cake to bring to daughters house for Easter. Funny how much longer things take when you have to hobble on crutches.

Oh, has anyone seen the "nests" made with broken pretzels and melted chocolate? They are so cute, I made them at Hospice Thursday for the staff and everyone loved them and so easy! great project for the kids.
Get the hollow chocolate bunnies at any market. I think I saw 5 for $5.00 last week. Walked right past them, but I must go back. It's tradition!
Did anyone color Easter eggs growing up? Carried on the tradition with your own children, nieces, nephews, grandchildren? You know, you can make some colored eggs for yourself, color about 6, eat 1-2 per day. On your walks. It does not need to have the same meanings, it is just nice. Add a hard boiled egg to a spinach salad.

Tumeric....recently purchased Liquid Tumeric at Cosco, take 1 tbs. It already has the black pepper needed, all in all, helps the pain, especially pain of over-exertion. This formula is not called turmeric milk. But it works.
I've been so stiff and achy, someone suggested it and said to add pepper to help absorb the tumeric better

Desert- the stuffed bell peppers sound yummy, and then add some of NY's chocolate strawberries for desert. yum.
I have never had a chocolate covered strawberry, now I have something to look forward to.
CW-during this time of year my DH loves the robin eggs.
Melt the chocolate in a double boiler or in the microwave. Dip the strawberries in melted chocolate. Coat in desired toppings. Lay the strawberries on prepared baking sheet and allow them to rest until the chocolate has set. The recipe also works for dipping pretzels, oranges, marshmallows, whatever you like.
