Up til now I've refrained from buying myself any Easter bunnies because I know myself too well, but now I think it's safe to shop. What should I buy, what are your favourite treats?

Okay I promised a good vegetarian dish. Bell peppers stuffed with brown rice and brown lentils, seasoned with your favorite spaghetti sauce. Cook 2 c brown lentils in 5 c hot water 20 min or so, till tender but not mush, add sauteed chopped celery, diced onions, chopped garlic and diced carrots sauteed in olive oil til tender, plus salt and pepper to taste. Cook 2 c. rice in 5 c. chicken broth in rice cooker til done, about 20 min or till tender. Let stand 5 min then fluff with fork. Combine rice and lentils. Stir in spaghetti sauce (Ragu or Prego) and set aside. Remove caps, seeds and membranes from 4 bell peppers, any color. Place in boiling water about 3 minutes each or all at once to parcook them (reduces acidity). Drain well. Spray bottom of casserole dish with cooking oil spray. Place peppers in baking dish. Fill peppers with rice/lentil mixture. Fill dish around peppers with extra filling. Bake at 350°F about half an hour or till filling is hot. Sprinkle with Parmesan and serve. Excellent with garlic bread and a side of corn. We like this better than traditional rice and burger-stuffed peppers. If you try it, please let me know what you think. Thank you!

I like to change up my smoothies by adding freshly mowed grass or tree bark. Just kidding. I love adding peanut butter powder and bananas to a chocolate oat or almond milk base. I freeze the bananas overnight so no need for ice and preserving the full flavors.

Today is Mother's 81st birthday 🎂. She loves spare ribs. I am fixing spare ribs, cole slaw and sweet potato fries for her birthday supper. And, of course, birthday cake and ice cream!!

NeedHelp: a friend of mine makes green smoothies. She may start with pineapple or orange juice (watch those sugars and calories, though!), yogurt, a banana and a handful of frozen fruit, but then she throws in a huge pile of spinach or kale (or both!) and even celery! As someone here suggested, toss in a handful of some kind of nuts or seeds for protein. Sometimes a "green" smoothie will come out brown instead of green, depending on the color of the fruit used. If you want it to be a prettier green, use melons, fresh or frozen pineapple, kiwi, papaya, mango, apples, apricot, peaches, etc., instead of dark berries.

Let your imagination be your guide! Mmm... I think I am going to go whip one up right now!

I am going to try some of those! I like making smoothies. I never buy ready made. But I have only done frozen fruit or fresh and adding yogurt at times.

Had never considered some of your additions but that makes it like a complete meal. I love it! Thanks again.

Have not tried kefir.

You can change up your smoothies by changing the liquid base to fruit juice or almond or soy milk, stir in some dry oatmeal and maybe some ground flax, then add in a scoop of protein powder, then fruit. I've made mocha smoothies with coffee and chocolate syrup, or banana and peanut butter done with almond milk is good too. Those store bought smoothies are pricey but they often have interesting ingredients and can be used as an ingredient in your smoothies, the green ones may contain spirulina and kiwi. Have you ever tried kefir?

I need some new smoothie recipes for when I don’t feel like eating or as a treat for mom. Any ideas? I usually do frozen berries and vanilla yogurt. Sometimes throw in a banana too.

What are these green drinks that my daughter walks in my house with? I’m afraid to ask her. They look gross! Haha

I was too tired to eat tonight. I fed mom and hubby meatballs and spaghetti. I had a container of yogurt.

Okay Smesh, how about a good recipe for chicken tamales using shortening (Crisco) in the masa? I loooove tamales but they must be porkless! If you have such a recipe, pm it to me and I will try it out at my earliest 😀! Because YUM!

Humm, did somebody say pasta? And potluck! I'll bring the lasagna... and cream of asparagus soup, made with creme fraiche, which is something I discovered only recently (hail, Google!). It's not much fun cooking just for three of us, especially when the grandchild turns his nose up at anything that looks, smells or tastes like a vegetable, lol! Cooking for a crowd's much more fun! Woo-hoo!

Gladimhere - stay safe, wherever you are! That weather scares me. Should pass north of me, but know that DH and I pray for all those affected.

Chili Relleno casserole is what I’d bring. It’s yummy and fairly easy.
(You'd think it would be a Mexican dish....but it isn’t). It’s made with whole, canned (Ortega) mild green chilies, jack and cheddar cheese, held together with egg, milk and flour. Salsa on top. Bake in oven 1 hour. Great alone or with other foods (as a vegetable dish).

Where and when? I’m ready! 😋

I think we should all get together for a pot luck some day, I'd love to try some of the regional/ethnic dishes I read about on here!

This morning I pulled out a sleeve of yeast that expired over a year ago and rather than toss it I tried one packet to see if it would proof . Well it did no problem, so tonight I will be having a panzerotti/calzone with a few extras left over to freeze for later. I didn't really follow a recipe so I hope it tastes OK.
