Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.

One is the famous N'awlins shrimp dish at King's Fish restaurant. Delicious.
The other is a creamy N'awlins seafood dish at a very busy oyster bar in Las Vegas. Even more delicious. There's always a line of people waiting to sit at the bar.
Mom had french toast, DH had an egg and bacon breakfast sandwich, some chili cheese tater tots, I had some cheese pizza and cheddar peppers.

I tossed the chicken carcass in the pressure cooker with four cups of water to have chicken broth. I will freeze to have for later dishes that call for chicken broth. 😁

Now to the point....speaking of chocolate.....I thought I’d bake cupcakes for the first class (checking first for any diabetics or allergies, of course).
Their first word in English will be CHOCOLATE! (Spelled the same in Spanish but pronounced differently).

Raisin clusters, sigh...
Chocolate in all its forms. Every shape, filling and mix-in known to man. And the full Easter selection! So many fun novelties.
I had a hankering for the raisin clusters Mom loved so much. Yum. The reality matched my memories.
They had candy cigarettes, too! That put a BIG smile on my face. I know they’re politically incorrect now, but such a good childhood memory. Ahhhhh. That chalky, vaguely wintergreen taste. The red tip. The powder coating that “puffed” slightly.
The good old days!
I have some See's peanut brittle in the cupboard calling me
Tonight was chicken burritos, refried beans and macaroni salad.
p.s. Favorite piece of See’s candy...milk chocolate peanut crunch square or California brittle. Wish I had 2 right now. 🍫
