I had to train myself to stop burning food. I always turn off the burner when the food is finished (better to reheat than to scour pots and pans) and when I leave anything to finish cooking while I do something else I always set a timer - the one on my stove won't stop until I turn it off.

Well, since I now have to work tomorrow, we had our corn beef/cabbage/potatoes and carrots today. Very yummy, and leftovers galore for me tomorrow! Mom had a bowl, and said she may have another when she comes up for bed. One way to get some vegies into her!

I've always considered myself the queen of reinvented leftovers, and now that I'm living alone I pretty much have to be. Day one - shredded beef and rice. Day two - cold beef. Day three - an addition of bbq sauce, onions and peppers becomes pulled beef sandwiches. Today I added in some more onions, peppers, celery, mushrooms, spices and a can of heinz chili beans - OMG, it's better than day one😆

Maple walnut, butterscotch. The other See’s that I got was Toffee covered with milk chocolate and rolled in finely chopped almonds. I’m a chocolate junkie. I like a brand called Esther Price based in Ohio. They only show up in my area around Christmas and Valentine’s Day. One of my BIL’s brought me and MIL a box for Valentine’s Day. Chocolate covered cherries by Esther Price are to die for.

I didn’t cook dinner this evening. A friend went to CA on vacation. I took care of her cat. Today when I got home, there was a thank you note and a one pound box of See’s chocolates behind the storm door. I had three pieces and tried to compensate with a salad. Then I thought heck with it and had another chocolate. This was an excellent thank you gift. I had only had See’s once before when a client gave me box for Christmas. See’s is so good.

AliBoBali: Although much of what has already been said is of good information and yes it is advisable to toss veggies that are too old. I will admit that I have used frozen veggies that have been several years old. But only if I boil them for a good long time, and then add them to a soup concoction. Mostly I only LIKE to use fresh items. But sometimes we find that our freezer has been hiding items from us and if the product is not too freezer burned or dried out, I still use it up. If anything looks questionable though I toss it out.

We just got our new stove delivered last night-what a beauty! 6 burners with an optional griddle (comal) in the middle, a glass top and electronic ignition. We’ll test it tonight with teriyaki beef with vegetables.
New things are so much fun! 🍳

Frozen veggies are not the best thing to roast in the oven for a long period of time. Frrozen veggies are blanch in hot water then freeze. However, I have a side dish that I make with frozen veggies in the oven, but I defrost or heat the vegetables up in the microwave until most of the ice is gone or until they are warm this will cut the extra moisture out therefore making the veggies roast in the oven better. They will firm up nicely in the oven. I hope this helps for your next cooking frozen veggie adventure if you should ever try it again:)


PS: Don't cook frozen vegetables if they have been in the freezer for 5 months or longer.

I pulled the chicken and green beans out after 40 mins @ 350º and I'm surprised how raw chicken is in the middle. Will frozen veggies make the chicken take longer to cook? I'm figuring this out... But the beans taste good, have good texture. 👌

The only difficulty with roasting frozen veggies is that they will likely release a fair amount of moisture as they thaw so they might not be the texture you are expecting, on the other hand I like to cover with foil and oven steam some kinds of veggies - I made green beans and garlic to go with the christmas turkey and I thought it was fantastic.

PS, I probably would have used those sad frozen veggies in a soup.

I threw out those veggies because they looked gross, but I have frozen bags of other veggies, some nice whole green beans. I can just use those in my dish, then? My concern is overcooking the veggies, I think. I'm actually not sure what my concern is except that I've never used frozen veggies to bake in oven before and there's no advice on that specific topic online -- nothing easily found, anyway -- and that makes me think it's quite uncommon to use frozen in the oven.

Frozen veggies expire in 8 to 10 months so I wouldn’t eat them if they are that old. They won’t taste good.

I have roasted frozen veggies before and it works out if you don’t have fresh but don’t cook those.

Just cook the chicken.

Question for anyone here who wants to give input: I've been wondering if I can use up some bags of frozen mixed veggies that have been in the freezer forever... seriously they are at least a few years old, so either I use them or throw them out. Can I put them in with some chicken pieces and some small amount of seasoned cooking stock and bake in the oven?

I know you can roast veggies, or make them in the oven different ways, but I've never thrown bags of frozen into a casserole dish before and baked them.

I figured someone here would know about this. I can't get a straight answer from online research. I don't see the harm in throwing in the veggies but I don't want to ruin my dish from too much water (coming out of veggies), or burnt veggies, or whatever else. Thoughts? :-)

I was just video chatting with my little toddler great nephew, little one have such a different energy and even when they are bad they can leave you feeling energized instead of drained - especially when you can hand them back to their parents at the end of the day 😉. How great to have a meal all ready when you got home, sounds perfect!

Babysit my grandkids today. From 8am until 6:30 pm. 3 yr old granddaughter and 8 yr old grandson. 3 yr old had 3 meltdowns and I mean melt downs because she didn't get her way.
So when my daughter's mother-in-law brought over dinner for us i was sooo grateful! Once I get home I'm too tired to cook.
So I had smoked chicken breast, slaw, and baked beans. All made at their church kitchen for a fundraiser.
