Lots of great cooks on this site. Good ideas for short cuts if we are tired, whatever...

I generally cook from scratch because I like real ingredients and it’s how my mom, aunt and grandma cooked.

I love doing veggie soup if I am stressed. Chopping veggies can be therapeutic!

I get it! Me too. A break from it all.

I love eggplant lasagna! I am such a wannabe Italian! I married one, though 😊.

Not to brag but I am a great southern cook! New Orleans! Does it get any better? Haha. I do all the traditional southern cooking but I also do vegetarian stuff as well, such as eggplant lasagna, spinach lasagne, mushroom omelette, etc.

Tonight, meatballs and spaghetti though. Tomorrow will be roasted chicken and veggies. All about balance. Seafood on Friday during lent.

As ya’ll know, we moved to the Puerto Vallarta area. We looked around for stoves and found a good deal at one place. I paid in full (no financing). They said it should be delivered on Saturday (last week). Then changed to Monday and now I’m told it will be Wednesday (tomorrow). (One needs to have an extraordinary amount of patience to live in México).
Im tired of sandwiches and “cooking” things in the microwave. We could eat out more but not good on the calories or the budget.
If my stove doesn’t come tomorrow, I will cancel the order and buy it somewhere else.
They say it’s in the same city that we live in but the delivery guys can only deliver on certain days. Sigh 😕
For now, just dreaming of a home cooked meal. 🥘🍷🧁

It's funny to think... that *all of you,* and caregiving life, made me a better cook, a decent cook. I get around a kitchen much better in general, since caregiving life and interacting here about this topic. There's pretty much nothing I wouldn't attempt at this point, but so little reason to do so, with only me to eat it and I work at a restaurant in a city of restaurants! So... there's no reason to cook. But I'm getting over the last of this lingering sinus/everything infection, so I'm cooking at home. The sausages and kale was a nice thrown together meal.

Eta: See, Send...? This is helpful. I get feedback about my methods and I learn something... in a way that reading a recipe card wouldn't accomplish. ;-) Thanks! I thought it was "braised," but you usually only hear that term when it comes to meat preparations, or at least that's the way I'm used to seeing it.

You are correct Ali. The vegetables are sauteed first, then covered and "braised"
to finish cooking.

Spinach and feta chicken sausages (thank you, Aldi) and braised kale. Twas good.

I think "braised" is the right word for when I throw a big bunch of kale into the oiled skillet, then cover and steam until it's soft. It works as a cooking method for fresh kale. I'm liking it, seasoned with my all-time favorites of Worcestershire and minced garlic, and I hated the stuff as a kid. It was the worst. If my mother had made it like this, I think I would have eaten it.

Taste buds do mature, sure, but my mom didn't season or soften it nearly enough imo.

I am thinking of trying a roasted cauliflower and butternut squash soup. Haven't gotten around to it yet.

Making cod in marinara sauce for supper again. it is becoming one of my standbys.

Golden23, my Grandma made Yorkshire Pudding as well, A favorite when we had a beef roast.
My Grandma was originally from Canada but she had married a man from Scotland when she married again she married an Englishman. So way back in the 50's and 60's I was eating things that my friends never heard of. Yorkshire pudding, curries, custards, Pilaf's I know I am forgetting some.

Well tonight, I have 2 grand kids over and one is sick so home made Chicken noodle soup.
Just took a pan of Grand Prize Coconut Caramel Bars out of the oven. They are for a Support Group on Monday and I will also be making the Irish Soda Bread for that. I will bring both. The Grand Prize Coconut Caramel bars are just like the Samoa cookies. (Recipe at King Arthur Flour)

I've been hungry for a good squash or pumpkin soup but I haven't made any because I don't find them to be very filling, but pairing lentils and squash in a soup should give it some staying power. I've been looking up recipes and came across one from epicurious for curried squash and lentil soup with basmati rice... Hm, I have some leftover curried rice...

Salmon burgers and green beans. I put on a few lbs around the time of mother's passing I am back to my low carb regime and taking it off.

I use online myfitnesspal as a means of recording my weight, food intake and exercise. It does more than that, but that is all I am using. I find it very helpful. Research shows that writing down what you eat helps you to eat less. It didn't work for my oldest son. He was shocked at how little he needed to eat to lose weight so he stopped using it - too discouraging. He has lost 20 lbs anyway. Good for him. It was stopping smoking that put the weight on for him. He used to be an over 6 ft tall toothpick. Now there is a large olive on the toothpick. 😉

Hi Barb, I remember you posting that. I'm hoping to take it off by cutting out what I ate the last month out of frustration and exhaustion dealing with the house and getting rid of soooooo much stuff. On day 2 I'm doing better. In a week I may actually weigh myself. Your dinner sounded wonderful. Hope you enjoyed it.

so Riverdale; after my mom passed away (after a LOT of ice cream an alcohol) I signed up with Noom. I lost 25 pounds in 4 months and still working at it. (((hugs)))))

I shouldn't have visited this post. We have been getting our house ready to sell. There is nothing to eat. I am starving. My husband is with the accountant. I wanted to lose some of the weight I put on in the past six weeks. I still do but I feel as though I will pass out. Not really but sort of. I keep the vision in my head of the women in my exercise class where I am heading back to. I don't know how some of them survive. I truly want to ask them but one has to be careful in the south. I will pretend I am dining with some of you.

Grandma1954 - mother put potatoes around the roast too. That was in the days when meat was fatter and the potatoes got crispier on the outside. Onions and carrots could go in too. I am not much of a potato fan, but I put other veggies in there to roast. With a beef roast, mother made Yorkshire pudding batter (like pop overs) and, in the old fashioned way, poured that around the roast or into a square pan with drippings. It got really crispy on the bottom, absorbed some of the beef flavours and was so fluffy on top. It doesn't work these days as there isn't enough fat. Now I make what are essentially pop overs in muffin tins. (when I do it). I used to make Toad in the Hole which is a hearty meal of Yorkshire pudding cooked with sausages in it, which are cooked in the oven partly before adding the batter. Good rib-sticking stuff. How we survived with all that beef fat I don't know, but my blood fats have always been fine.

Breakfast, lunch and supper. Dinner can be the noon meal or the evening meal, but it is the main meal of the day - back in the old days when farmers got up at dawn they needed a big meal at noon so that was dinner. (Though I'm not sure how they managed to carry on after eating without a big nap in the middle of the day)

I try not to snack at midnight. I try not to eat after 7pm. But sometimes if I absolutely need something I will have a piece of 24 grain toast no butter. I love toast! :)
But when I was on my chocolate kick, it was symphony candy bar, whoppers, or hersheys with almonds.

I probably have the most boring dinner posts here. Some of you all post really sounding delicious things.
Dinner here for me was my usual black beans and salad. Mom just had some cereal and DH had steamed venison, mashed potatoes and corn on the cob. I so wish I could get the two of them to eat more salads. But at least we have eliminated strawberry milk from Moms diet. She gave it up on her own. And I have gotten her on board with whole fruit vs juices. Anyway. Happy eating all!!

I wonder how many out there call dinner, supper. And lunch, dinner. My parents have always. Mom still does and I have to always clarify are we talking about dinner or lunch. But she is a beautiful challenge, that I love.

golden23, My Grandma used to take potatoes and half or quarter them and rub them with the saved bacon grease and roast them with the pork roast. The outside was brown and crispy and the inside was fluffy. I do the same thing but do not rub with bacon grease, I par boil baby red potatoes then sort of smush them and put them in a hot pan with a bit of olive oil, rosemary and garlic. I roast them until they are browned. Same crispy outside same creamy inside but no peeling or cutting. And they are great with pork, chicken, lamb!


Oh and my Irish Soda Bread was a hit today, I used a scoop rather than making a large bread, plus the large loaf takes an hour to bake. Doing them small they baked in about 20 minutes.

Roast pork loin -maybe the best one I have ever made. I went heavier on the seasonings - garlic, rosemary, salt (not too much) and lots of black pepper. Put some brussels sprouts to cook beside the roast.

Mmmmm good!!!
