I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.

Too tired to make a salad.
A large portobello mushroom, the size of a hamburger bun can be a veggie burger.
Saute in fryng pan, or grill on bbq.

Simple, nothing special but really good.
The original recipe I took from is as follows:
1 T ketchup
2 T soy sauce
2 T mustard
1 large onion
1 1/2 cup of oats
1 c beans (cooked of course)
1 tsp cumin
1 1/2 tsp chilli powder
1 medium carrot grated
4 cloves of garlic
dice the onion and garlic and sautee with the carrot until tender.
then just mix it all together and you can grill it or cook it in a non stick skillet browning it gives it more flavor.
When I made mine, I modified it to myself and Moms likes
2 T ketchup
1 T soy sauce
2 T mustard
1 T onion powder
2 tsp garlic powder
1 1/2 tsp chili powder
1 tsp cumin
1 1/2 cup oats
1 cup black beans
I completely forgot about the carrot.
But this turned out perfect for me.
The great thing about these is that you can modify it with seasonings, add nuts, Worcestershire, rice, throw in other veggies to liking.
Next time I am going to add some crushed walnuts and some peppers, or chipotle sauce.
This was my first try so now I will be experimenting with it.
If anyone else has a better recipe or different I would love to know it.

Sorry I am just so excited, I have been craving a veg burger, but the store ones have so many preservatives and extra junk, but now I know how easy it is to do. Just so excited. :)

•Homemade cheesecake. Wish I knew where that darn recipe went. I assumed I’d find it in my mom’s rubble after she died. But no.
•Homemade cookies. Sometimes ours. Sometimes from aunt. Sometimes from neighbor. Never from a box or bakery.

The only person I know who eats this late after work is Ms.Madge. How are you MsMadge?
