CW, Probably a regional difference, My Swiss steak recipe has a lot of tomatoes and onions in it. Some people in WV also add green bell pepper. Good either way. I use Alton Browns recipe. Google Swiss steak Alton Brown if you’re interested.

Pam, Round steak or cubed steak, pound in flour, salt and pepper with meat mallet. Brown in just enough oil to keep from sticking. Remove steak from pan. Make a basic gravy from drippings. Add a can of mushroom soup and stir thoroughly. Put steak in baking dish; cover with gravy. Bake for 45 minutes at 325 or until fork tender and separating. Usually serve with mashed or baked potatoes and green vegetable or salad. Alternatively, after browning and making gravy put in crock pot and cook on medium for 8 hours. I use this method if I’m working. But I prefer baked.

Last night we made the thai chili salmon and Chinese broccoli with sesame seeds. I can tell you with complete honesty I can go the rest of my life with out eating that leafy broccoli again. I sort of liked the salmon and the black rice.. mom hated all of it and hubs was... blech.., so out went the leftovers. Tonight is the homemade pizza (sauce smells wonderful) and dinosaur kale salad.. with a Very lemony dressing. Pizza is not done yet, I tasted the salad.. it's ...Lemony... We shall see. Cod dinner is left for tomorrow night. I will NOT be rebuying this box company.. And the box kit we did like was Hello Fresh,, not home Chef. So save your $$

MsMadge, Super easy. Three tomatoes cut in chunks, maybe 8ths, three cucumbers peeled and thinly sliced, you may also add some sliced onion if you want. Place in a plastic bowl that has tight fitting lid. Pour about 1/8 cup oil(you can use a very light olive or clear vegetable oil) over vegetables, sprinkle 2 tablespoons sugar (I use less, I’m diabetic), add about 3/4 cup Apple cider vinegar and 3/4 cup white vinegar. Some people like all Apple cider. Salt and pepper to taste. Put the lid on tightly and invert to distribute marinade. I forgot to seal one time and dumped in floor. 🙁 Refrigerate for at least two hours or overnight. I save any leftover marinade and use as a salad dressing.

Cookout. Mid afternoon. We have company from Montreal, CA and Omaha, NE visiting. Grilled chicken, corn on the cob, green beans, marinated cucumbers and tomatoes, vanilla cupcakes, pecan pie, homemade peach ice cream.

Voila`, taco salad! Used Blue Corn Chips with flaxseed instead of a tortilla.
Not too hungry after lunch, but it satisfied my craving for home made gringo tacos, but it was a salad. Hubs likes his with lots of lettuce and cilantro,, then I get all the meat, which was hamburger.

Sue, wish I had seen your list before I made dinner. Do you add cheese or just sour cream? We did not have any beans or onions in the salad-oops.

Ali, our lunch was so fabulous, (not bragging, it was a fabulous mistake), similar to your healthy dinner, that I would need to go through the trash and find the ingredients on the marinated vegetables, to which I added fresh portobello mushrooms and brown rice, topped with cheese. Did not know what it was exactly, but I am thinking paella`.
The frozen marinated vegetables (included grilled and marinated eggplant, tomatoes, zucchini, mushrooms, bell peppers and other stuff.) were supposed to be served at room temp., like hors d'oeuvres, not heated like I did it. This kind of creativity happens when "The Fork Report" comes on and I get really hungry. Adapted cooking in my big iron pan.

Oh gosh, a taco salad sounds super! It's been so hot and muggy this week, so we've had a few salad dinners.
Hubs gets a bit too creative mixing ingredients at times but nothing too wacky.

Maybe I'll try one tonight or tomorrow but, since my Mexican hubby has his own ideas on what tacos are, calling it a gringo salad would be better.
A traditional taco in Mexico only has meat, onions and cilantro in a corn tortilla. Since I add a whole bunch more stuff than that (tomatoes, lettuce, beans, olives, sour cream, salsa, etc.) he would warm up to eating a salad of a different name.

smeshque - yes, I have had creamed peas and have even made them, R likes sauces. I generally prefer my veggies "au naturel", but they are OK for a change.

I think I just had supper after a late lunch with my granddaughter. I grocery shopped on the way home then, had a few spoons of hemp seeds, a few spoons of a good probiotic yogurt, a clementine, a small chunk of DF cheese and, of course, coffee and chocolate. Oh, and I forgot , an almond choc covered coconut ice cream bar. 😁😁😁. I can't eat desserts in restaurants.

I ‘ve Cooked all afternoon. PJ is going to a church potluck. I fixed baked steak and gravy, pot of green beans, potato cheese casserole and Cherry delight. My request was for home to find me a diabetic dessert that looks good.

Smeshque ~ when I was a child, my mother's friends and relatives would tease her about feeding creamed peas to us kids. I guess she bought them for us often enough. I don't remember eating them, and doesn't seem like a food a child would like!

I thought I'd post my non-glamorous dinner for laughs but I love that you guys shared yours, too.

I'm having onion, tomato, cumber, feta salad, poured a little soy sauce and balsamic vinegar on it, it's a staple for me and it still works, still yummy to me.
