The problem with this time of year is there is just too much local goodness available all at once - cherries & yellow plums, the first melons, and every veggie that you can want. If I can find any of the early harvest apples I'd like to make some applesauce, but nobody seems to have them anymore :'(

Stressed out because of family drama - started baking to get calmed down. Made cookies, a batch of bread and blueberry scones. Tired, but not stressed. Husband cooked dinner boiled lobster, baked potatoes and tossed salad. I got 25 lbs of blueberries this afternoon - pies are on the horizon tomorrow. First of the season.

Sue, I am not vegan. I eat meat freely, but I am allergic to dairy products and that has gotten worse recently, so even small traces are out. I am having to review what I eat. I was using ghee (clarified butter) but am having a reaction to that so found a recipe for vegan butter and thought I would try it. There probably is at least one vegan butter substitute in the grocery store, but this looked easy and good. Regular margarines have milk products in them. It contains Refined Coconut Oil, Canola Oil, Unsweetened Soy or Almond Milk, Apple Cider Vinegar, Nutritional Yeast, Turmeric (for colour) Salt. Apparently it works well for everything except making frosting. It hardens in the frig but at room temp is very spreadable. It has a few more cals than butter and a little more fat.

Value Village is a thrift store. R loves bargains.

I'm familiar with vegans. A good friend is one. What a challenge making my zucchini bread without any animal products! I substituted applesauce for eggs (I think) and it came out great but a different flavor. Her husband devoured it. Poor man used to eat meat and everything else but has turned vegan for her--that's love.

My son is a lacto-ovo vegetarian (going on 20 years), no meat or fish but dairy products and eggs are ok.

Getting back to the discussion....what is vegan "butter" made from? Is it greasy and spreadable like butter? Must have fewer calories and probably no cholesterol.

Why does Value Village sound familiar? That's a thrift store, right? I'm sure I used to live near one and shop there (SF Bay Area).

R picks up bargains and got a B and D crush master at value village for a song. So far it is excellent. I am thinking of making my own vegan "butter" as I found a good recipe which uses a blender.

Bought makings for gazpacho. Went to make it. No blender. It is in a box around here somewhere, a cheapy. So I went Amazon Prime shopping. New, very nice blender should be here Friday. And it was about 40% off!

Sue - love pea soup. I put thyme in mine for seasoning. Hocks are so darn expensive . I use whatever ham I have around. My electric pressure cooker makes great soup quickly, and cooks up red kidney beans to die for. They are so creamy and tasty. Tonight I had some canned maple beans, and ham lettuce wrap.

I found a bag of split peas in the half off section of the grocery store 2 days ago.
Now, soup in the hot weather is not "normal" but my mouth got to goin' and so I bought a ham steak slice, cut it up in chunks (cheaper than ham hocks and a lot less work), onion, garlic, carrots, baby potatoes, smoke flavoring, herb seasoning, chicken broth, tumeric, oregano, salt and pepper.

Even though the weather was warm, inside the house was comfortable and we sucked down the soup with gusto. 🍵 🍞 🍷

Cwillie...we have an electric stove but it still heats up the kitchen. Think gas stoves are even worse for heating up the kitchen (smile).

Dana, I understand! I'm better with cooking these days than a few years ago, but I still make goofs.

Yesterday I was hosting a friend from out of town for the night. I baked some pork chops in onions, diced tomatoes, zucchini slices, greens. The problem was that I didn't defrost chops completely in the refrigerator, so I put them in the microwave to defrost. I didn't take into consideration they were already partially defrosted and put them in for full time of defrost per weight. I ended up partially cooking in the microwave, even while the center of some were still cold and icy. Blah. So of course they cooked very unevenly, and overcooked. They weren't inedible, but it was annoying to serve this to my friend, since I had been doing so much better lately, but I missed the mark on this prep. Oh, well.

She ate it, said she liked the taste. Good enough, I guess. 😝

I stopped off at Panera today.

Really admire those of you who are such good cooks. I'd have a better chance of learning ancient Greek than of making those work!
Me trying to cook something new:

Stare at recipe in blank incomprehension.
Take a deep breath.
Tell myself I can do this.
Gather ingredients. This requires going to the store, and a Mom sitter, so I put it off and heat some frozen food.
After trip to the store:
Take out ingredients.
Scratch my head.
Do my best to follow the instructions.
Produce something that does not resemble the pretty picture.
Taste it.
Ugh. It has the consistency of cardboard.
Order Chinese food for delivery.

Tell myself, well, at least I tried.  
Hope that next time maybe, just maybe, it will work out.  
Think that some day, I will... I will... I will pass Dinner 101!

I love the idea of using an electric fry pan Dusti, there is no way to turn on the gas stove without heating up the kitchen!

Love my electric frying pan. Doesn' t heat up the kitchen. Had pork chops, mashed potatoes (cooked them yesterday), corn and cold biscuits. We have two 2.5 gal containers with spouts that go in the fridge. Made one with fruit punch sweetened with Splenda and the other with unsweet tea. Tomorrow salad and something light. Going to be hot out.

We are drowning in banana peppers.. hubs always plants a ton of them.. tonight I stuffed some with a cheese mixture and we are going to try them.. you bake them and we are having periogies with them

Ming s HOT! About 12 days of near 100 degree temps. Too much for me too. Band festival this weekend, it is so darn hot I think I will just stay in.

Though there are all sorts of food trucks there maybe just a short trip for dinner. Oh, maybe not. I have makings for gazpacho. Mmmmmm. Yes a mom recipe if I can find it. Oh daughter 2 took a picture of it a couple of months ago. Try that before I start hunting.

Glad, Home Ec teacher was my career goal. University cancelled Home Ec programs and that’s how I ended up in Psychology😕 I’ll bet she did have great recipes.🙂 How’s Ming?

This sounded good until I got to the mayonnaise - that sounds kind of weird to me 🤔, but if you say it's yummy I believe you!

I always liked my mom's good china and have inherited and it by default since it was moved into my house along with all of the other things we kept from the farm. Paper plates are easier though.

Her recipe sounds just like my Mom's too. My Mother used this recipe to make it for the family on my Birthday and I'm sure she probably doubled everything too.This was her recipe she used for Frozen Fruit Salad
1 teaspoon unflavored gelatin
one/fourth cup cold water. Dissolve over hot water
Add 1 can fruit cocktail with the syrup and add one/fourth cup sugar to the gelatin mixture with the fruit cocktail.Add 1 can apricots drained and cut up,1 can dark sweet cherries drained and 1 can Mandrin oranges,drained.
In a mixing bowl,whip 1 cup of heavy whipping cream (a lot) and the fold the whipping cream and a half cup of mayonnaise into the fruit mixture.Fold everything together.
Add a few miniature marshmelllows,pour into a pyrex or whatever container you wish and dot with Maraschino cherries,cover with foil and freeze overnight.
And that's how my Mom did it.It makes a lot though and I ate way too much yesterday.
It's so good and was always such a treat.
When I was growing upMother did a lot of entertaining and cooking and she always used her good china and silver and Goblets and such,but I have never used mine because people quit using it and things changed.

Lu, my mom used to make a frozen fruit salad for easter. It was so simple. She used canned fruit cocktail. I suppose any fruit could be used. Mixed it with some whipped cream and a bit of maraschino cherry juice, turned the salad a light pink, perfect for easter. Then she filled the empty fruit cocktail cans with the mixture and placed in the freezer. When frozen warmed the cans just enough so mixture would slide out. Then sliced and served on a lettuce leaf. It was good but I have never made it. I just don't eat that way.

Mother used to make the best frozen fruit salad for my Birthday once a year and Iv'e really been wanting some,so I made this yummy fruit salad,waited for it to freeze overnight and all day today,Iv'e been eating it on and off till Iv'e made my tummy hurt,but boy,is it good~

Hi Cdnreader...Sorry for the late reply. Still have not figured out how to find where I have posted....ugh. The hamburgers, fries and fresh lemonade sound yummy....

The NY Strips we got in one of the packages offered by Omaha Steaks. Can't afford them very often but darn all their meats are good. (we have had chicken, pork chops, hamburgers and steaks) and they last in the freezer for quite a while.

I fixed a roast (from regular grocery store), premade mashed potatoes and green beans today. Just got back from taking my honey to ER for edema and we had a snack of roast beef. Don't usually eat after around 7pm but just had to have some.

You won't need a passport to get into Mexico but you will coming back into the U.S..
I've heard you can do it with a birth certificate but I wouldn't. They would ask you why you don't have a passport.

The heat was oppressive today. Over 90 degrees (at 6 pm) and it rained here in TJ for a few minutes. Aaaah, takes me back to Puerto Vallarta in the summertime. ;)

Glad you could cool off in the mall. We visited MIL (no a/c), I got my hair done (yea, she had a/c), visited my Mom (no a/c), ate at a Lebanese Restaurant (didn't have it on) and had a Sangria at Routa del Vino (no a/c). Thank God the house is always cooler than outside. It's 11 pm right now and is 84 degrees in the living room. I'v taken 2 cool rinse offs in the shower and will probably have another before bed.  Will be glad when we can stop sweating!
