What a NICE CALM REALITY BOOST!
Here it is leftover chicken and noodles; too hot to cook something...made a bean(SSSSSS) salad for tomorrow- letting it marinate because it has lots of red onion in it so it will be even better with a sandwich or something on grill tomorrow...also going to be hot.

Choices at the NH were liver and onions with niblet corn and potatoes or mango chicken stir fry with peas and rice (from past experience I know that this does not even remotely resemble any stir fry I've ever had, it is just chicken pieces in a strange, fruity sauce). So I picked up some Liberte Mediterranee yogurt (high fat) and mixed it with freshly pureed local strawberries and popped it in the freezer. Yum. I think mom thought so too.

Last trip to Ralph's (Kroger) much of the fruit was hard and cold - picked and kept in storage no doubt, but there were some bags with a half dozen or so for $2.99 which have been pretty good
Otherwise, place those peaches and plums in a paper lunch bag and they might ripen better

All the one's Iv'e tried look ripe and ready and then they're as hard as a rock when I cut them up.I'm having good luck with cantaloupe's though...

Yes they did, and since it was catered they had to puree the whole lasagne, not just the sauce (with a side of mashed potatoes) like they do on spaghetti night. I told them to hold the bread and salad so they offered some baked beans from the other menu choice instead. Mom ate almost all of it!

They are doing repairs in the kitchen at the nursing home so they brought in pulled pork and lasagne from a local caterer.... it smelled sooo good. When I got home I thought "surely I've got some lasagne in the freezer", but no luck. So I'm having a box of chicken vindaloo with a side of butternut squash 😐

Hi Boni… I totally agree. I just started two light hearted discussions for that reason. (see family and relationships)

As to cooking..tonight we are having an old fashioned breakfast for dinner...sausage, scrambled eggs and toast. Tomorrow making an old fashioned roast with potatoes and carrots.

SO sorry to hear you have/had pneumonia. I've had it 3 times and never want it again. I can't believe how tired you get. I was exhausted just walking from the living room to the kitchen.

And so sorry about the 'cow plop' food. Isn't it terrible what they want us to ingest?
Tell her you'll eat one bite for every bite SHE eats!! Haha

Egads! No salt, no sugar, no fat....what's left to eat?
Could you thin the slop out and pour it down the G-tube?

Mid day on the East Coast looking forward to my lunch.Full liquid diet, no, salt ,no sugar fat free milk and seasoned with pepper. Never get what I order. Everything laced with thicket. Dietitian stands over me like a prison guard. If I so much as clear my throat she urges a sip of thickened water, not allowed a straw. Tried the pureed diet but lifting the cover off the plate and seeing a brown cow pat accompanied by a similar green one was enough for me. Dietitian says they are just trying to keep me safe. Their safety is at increasingly at risk if they keep this up. Where is the Viking when you need her?
Was admitted with pneumonia four days ago and had plans to leave today

Bad thing is, there is usually no such thing as a small case of food poisoning and you spend the next 36 hours in the powder room. 

The only good thing about having diverticulitis was loosing 17 lbs.  Ten came back, darn it.

I hope, in your case, there's not a bacteria in sight! 🍗

Is it bad that I think a small case of food poisoning wouldn't be a bad thing for my waistline...? (Kidding!  Sort of... lol)

Sorry. This says no.

"Cooked food sitting at room temperature is in what the USDA calls the "Danger Zone," which is between 40°F and 140°F. In this range of temperatures, bacteria grows rapidly and the food can become unsafe to eat, so it should only be left out no more than two hours. Apr 20, 2015."

I wouldn't be so worried about your cholesterol levels as your SUGAR level. That meal is 90 % carbohydrates (breading for tenders, fries, bread, bbq's sauce, cookie and soda-all carbs). Good you're not diabetic. One eats at KFC for its finger lickin' goodness not to watch carbs! 😋

I guess you could heat it up in a frying pan on very low heat with a lid (?) I wouldn't try already popped corn in a microwave.

I had a little bit of it an hour ago. It seems fine. I *almost* set a timer to remind myself to put in the refrigerator... then I thought surely I'll be up again in the kitchen before I sleep, no big deal, I'll take it out then.

And that's the last thing I remember from last night. hahahahaha! The food is fine. It might be extra soft from sitting in the oven all night, haha, but I don't mind.

Makes for a yummy breakfast! Way better than boring oatmeal, haha.

I would probably eat it too, but try a small portion first before you go whole hog (whole chicken?)

I left the dish in the oven all night!! I turned the oven off, so it's not burnt, just left in the oven overnight, is the food is still edible...? I'm not sure. I'm having some for breakfast to try it out. I was tired, went right off to sleep last night while waiting for the food to cool in the oven. 😝

I'm baking a dish of chicken thighs in the oven right now, they're almost done. It's my usual prep: onions, garlic, greens, baby carrots, mushrooms on top of a layer of chicken thighs, all of it swished in a cup of seasoned broth to add some flavor and liquid, then it bakes for an hour at 300.

It's simple. I make the same way most every time, with a few variations in what veggies I add. But... I like it! And it's healthy enough. Nom nom nom nom...

I try to do almost all cooking in the mornings, as I have a classic case of Fibromyalgia, two bionic hips and a few other health issues. Mornings I am at my best. My best friend in the kitchen is my crockpot-used for many homemade soups and stews. I also buy frozen entrees and add fresh fruit or green salad. It is rare that I actually "start" a meal at dinner time. For me it is just too hard. Another thing is to have our main meal around 1:00 and have a sandwich and/or soup and fruit at dinner. Once a month we do Chinese take out or take and bake pizza. I have gone through my hundreds of recipes and now just use a few easy ones. My husband likes the repetition of his favorite chicken dishes. Yesterday it was a chicken, Polska kielbasa, onion, mushroom, pepper cassoulet-fast easy and yummy. Right now husband is obsessed with watermelon, so I buy and cube. It lasts about four days. (Best to find the one with the yellowest scruffiest, wrinkliest bottom!) I can't tell you how appreciative we are when a friend stops by with a casserole! MHusband has a good appetite and always wants vanilla ice cream before bed.

I always wondered who would order a double down from KFC but they've got a double down junior combo for only $5.50 so I thought it was too good a value to pass up.... essentially just 2 chicken tenders slathered in bbq sauce with a slice of bacon as a bonus, along with fries, bread, a cookie and a drink. (Just don't check my cholesterol levels)
