Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
The first guide I used to give me ideas of what to eat was a borrowed Weight Watchers booklet that I xeroxed and studied closely. This was in 1968. There were good ideas for complete meals, quick breakfast, light lunch, snacks and a chart telling which were the most nutritious foods. I’d never heard of some of the foods but tried some and liked them. Broccoli and zucchini were trendy then like kale and quinoa are now!!
Of course, look through Amazon where there are numerous simple nutrition, cooking and meal ideas in short book form. See if there are any children cookbooks, since you said you are inexperienced. Take your time, anyone can learn to cook. Keep a list of foods that have given your mom a stomach ache and those are off limits. I’ve cooked for 55 years.
I'd like to offer her some variety but am new to cooking. I've always had a kitchen because they came with the house I bought.
I could use some help with recipes without Milk (dairy), Breading on the meat, Gravy, Grease /fried, or hard to digest vegetables such as broccoli, cauliflower, asparagus,
cabbage.
Any help would be greatly appreciated.
Where can we buy strawberry rhubarb pie?

My mother used to make rhubarb pie, but never taught me. To have the rhubarb from your own garden, well, that is just like having a real life!

Today's dinner is salad, I think. I took the time to pre-make 3 containers of salad for future meals this week, so all I have to do is toss a couple of extra toppings on there and some dressing. Shredded some block cheddar cheese to have that ready, too. :-)
Our Mother’s Day was nice and relaxing. Hubs made beef stew for dd and me. Dd’s Hubby was at work.
Today we are having slow cooked ribs, corn on the cob and asparagus. I slow cook the ribs in the oven for about 5-6 hours, then add bbq sauce at the end under the broiler to caramelize the sauce a bit.
My colleague made the most delicious salad. Peas, shrimp, with chopped green onions and celery and dill dressing. Simple but delicious!
I'm still trying to find some new cooking classes and getting some fresh inspiration.
I hope the scouting goes well and you and your husband finds the perfect spot.

I was orienting my nurse replacement all last week, so I didn't have a chance to get on the board. What I didn't know (and the company didn't tell me) is that she JUST graduated! Aaahhhh!
We are off to Guanajuato, Queretaro and San Miguel de Allende on Tuesday. We're scouting out places to retire (3 yrs 7 mo. to go). I've heard from Mexicans and gringos alike that San Miguel would be a perfect spot. We'll see. Heaven knows I'm ready for a bit of time off.

You've obviously been busy planning a wonderful Saturday night fiesta
The menu; grilled rib eye steak, Italian spiced roasted baby red potatoes, steamed asparagus, (and being a half Mexican household, pico de gallo, guacamole and tortilas) a glass of Cab, ending with coffee and white cake with finely chopped pineapple and Mandarin oranges in the cake, covered with a cream cheese frosting covered in shredded coconut and decorated with pineapple, orange slices, maraschino cherries and slivered almonds.
After a day spent emptying my storage unit and cramming the contents into this wee little house, I was in no mood to cook or even make a sandwich. Thank God my daughter and her cousin (big tall, strapping young man) were able to help - made the job much easier and faster. $55 a month I no longer have to pay on the storage unit!
