Took nephew out for dinner tonight. We went for Texas bbq. Loved the pork ribs, beef ribs, salad, mac and cheese and scalloped potatoes.

BlackHole, I had similar - 2 reheated burgers (I like to cook up a batch of 4 and eat them throughout the week when I get the craving for burgers). No bun, just cheese, mayo, mustard and pickles. Side of chopped salad.

Leftovers! One grilled hamburger. One pesto chicken breast. Some dabs of mashed potatoes, stuffing, rice pilaf and mac-n-cheese.

Last night - cod in marinara sauce with bell pepper strips, steamed potatoes, sauteed onions (R likes them with everything), spinach salad. The cod s a very easy and tasty dish.

Sue, I browned the chorizo. It was a little fatty. I drained all the fat. Piled up with all the other stuff. They were very good. I had a jar of salsa that a friend who studied cooking in Mexico made.  There was a restaurant in Bar Harbor ME, Miguel's that had the best nachos. These were as close to those as I've had since they closed several years ago. Thanks for the advice Sue. This evenings dinner was chicken burritos and nachos.

Regular pork chorizo is pretty fatty. You'll get a lot of grease in the pan after frying it. They have soy chorizo that has half the fat of pork chorizo. I think it tastes good because it's the same spices as the pork variety. The texture is a bit softer but I think people eat chorizo for the seasoning flavor. Probably wouldn't even notice it's from soy in a dish like nachos.

Chorizo is usually pretty flavorful so nothing else is necessary. Hubs fries some and adds it to scrambled eggs and makes breakfast burritos. Yum!

I forgot it was St. Pat's day today so, for the first time in years, no corned beef and cabbage.

I forgot to wear green and my husband pinched me! He forgot to wear it too and I got to pinch him too.

I was lucky enough to have breakfast at my MIL's house- a typical Mexican breakfast of chiliquiles and refried beans.
Then we went to a friend's birthday party and they served posole and birthday cake.

What a treat-both meals out! That doesn't happen too often.

Thanks CM and Pam for your tips on cooking corned beef. I don't have beer, but I have wine. I wonder if it would be a good substitute to cook the corned beef in.

polar -I love my (relatively) new electric pressure cooker. Split pea soup in less than 1/2 hour! I am going to do a stew on it this weekend. I decided to go with an electric one as I have been afraid of them since a child when the neighbour's exploded, and shot the pork meat and juices for head cheese into the air. It was dripping from the ceiling. Quite a sight!

for dinner - not much but I will be sure some of it is green.

Pamz, that's a very merry St. Patrick's Day dinner! Very nice!

I've had 2 Bloody Mary's at work today, as everyone is in a festive mood.  No more Bloody Mary's even though I do like how we make them here, nice and spicy with a skewer of banana pepper, cheese, sausage. This is the only place I've ever known that adds a bit of merlot and a bit of Guinness, and the taste is very good. We're off to the west of the downtown area and a couple people have come in who went out to see the Chicago River dyed green. That's a fun Chicago tradition.

I'm going to go have some barley soup and in 2 hours I'm off. It's been a fun day. I wore my green bowtie. 😁☘️

Polar we just got done making corned beef, cabbage and new red potatoes.. Happy St Patricks day!! We always rinse it off good, and cook in light beer. and also use the seasoning packet. Once the meat is done we boil the potatoes and cabbage (sometimes carrots too) in the liquid. Plus I made a Baileys Irish Mist cake. Happy people here tonight!

Yes. Drain it, rinse it, then soak it overnight in cold water and drain it again. Then cook it.

i just bought myself a stove top pressure cooker. I'm excited. Going to try cooking beans in there and see how quickly it can get the beans soft and creamy.

A friend of mine makes bbq rib in hers. She said the meat came out moist and more flavorful. I might give that a try.

Maybe I'll cook the corn beef I just bought on sale last week. I bought 4 bags of corn beef. Cooked one. It was SO SO salty. Maybe I should dump the liquid that comes in the bag and wash the meat to get some of the saltiness off.

cwillie- If you live in the us I have a plenteous seed bank, and don't mind sharing. It is not technically a cucumber but that is the way we eat it.

Ali- most people do not even peel the armenian cucumber, But I do, and eat it fresh. I enjoy marinating mine in some italian dressing and eating it that way. I have also made cucumber bread, as I had an abundance of cucumbers last year. It was not bad, different, but not bad.

I ate the lamb meat last night and had a good amount of the veggies I cooked it with left over. I added a little hamburger for tonight's dinner and now the hamburger has a nice lamb flavor, it tastes like lamb. That's a neat trick.

I made apple cranberry cole slaw for tonight and I’ll have a small turkey sandwich with it since I get off work at 8 pm. Everyone’s menu sounds yummy.

Golden, your dinner sounds tasty and well balanced.  I was in the mood to stuff my belly and relax from a tough day.  Goal accomplished.  I have today off and want to stay in bed late and relax...  but I cannot.  Womp womp.  I will take car in for some needed service and should be a nice day, anyway, relatively low key and productive.  Wishing same for you.    

Smeshque, I really should've saved the lamb until the next day because I wasn't hungry by time it was done, but I ate it anyway and was too full after. It was very good. The slow preparation with lot of liquid in the baking made the lamb come out very tender, falling off the bone.

Smeshque ~ do you always eat the Armenian cucumber fresh?  

Armenian cucumber is interesting.  I've never seen it.  Says online that it tastes like cucumber, so that must be how it got the name.  But also, it comes up in a couple of places under "types of cucumbers" even though it also says, in so many words, "technically not a cucumber but closely related."

I googled armenian cucumber, it's not really a cucumber at all but closely related to muskmelon. It sounds good, I wonder where I can get seeds to grow some.

Ali, I love roasted root veggies, I just cut up enough carrots, parsnips, rutabaga, potatoes and or sweet potatoes to fill my 9 X 13 pan, drizzle them with olive oil and sprinkle with an italian seasoning mix. Oops, forgot the onions,lots of onions, and you can throw in cloves of garlic too. Cover with foil and roast about an hour, if you want them to brown take the foil off and pop them back in under the broiler.

Ali-did you have room for the lamb?

Dinner-Anasazi beans(the best bean ever), salad(lettuce,cucumbers,green olives,flax seed, sunflower seed,tomatoes,italian dressing)

Anyone ever have an armenian cucumber? We grow them and they are the best cucmbers ever.
