Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
I'm probably one of the only people I know that likes Brussel sprouts. Mother called them "baby cabbages".
I liked pretty much all the vegetables that were served when I was a kid. Okra, however is not my favorite, unless it's fried.
There are some veggies here in Mexico that we don't have in the U.S..
Alcelgas is a green leafy vegetable sort of like spinach-delicious with pork.
Chayote looks like a light green pear. Tastes like zucchini or a mild squash, good in stew.
Verdolagas are small dark green leaves with a thin stalk, great cooked with meat.
Nopales are cactus cut in small squares (slimy when raw but good when cooked). Hubs mixed them with small pieces of chicken breast in a green tomato sauce tonight.
Tomatillos are green tomatoes. I love the twangy flavor, great for sauces.
I could go on but I'll stop here.

Growing up sprouts were one of the things that lasted all winter even if you had to go out and pick them frozen solid off the stalks. No frozen veg in those days just the sprouts and root veg that you could still dig up. The green beans were preserved in a big crock with layers of salt.
Sis had dinner ready. Canned beef stew. I took one look at it and my whole body shook with revulsion. So, I had for dinner the Banquet spaghetti meatball. Like everything else, it had no taste. It was blah... (flu knocked out my taste buds).
Was your "chicken" Tikka Masala a prepared dish (TV dinner, prepared packet?) Was it made for you to add the cooked chicken?
Kitchens of India is my fav brand of (condensed) paste to make Butter Chicken Curry or Tikka Masala. I buy it on Amazon (6 packages=$10.). Add butter, raw, boneless-skinless chicken pieces, water (or chicken broth) and the paste. Cook for 25 min. I serve it with Basmati (Himalayan) rice and peas. You could make raita (plain (non sweet) yogurt, seeded, minced cucumber, mint, cumin powder, pinch of salt, squeeze of lemon or lime) for a refreshing side dish.
Since I'm an odd bird, I'll often put on Indian music and eat these yummies in my sari or salwar and camise (Indian clothing). Hubs thinks I'm strange. What does he know? He dumps 1/2 a bottle of Mexican hot sauce on everything anyway. Olé!
When I lived near SF, there were lots of Indian stores and restaurants but not so many here in San Diego area. I've made glub jamun (sweets) for dessert but I'd rather buy them. Oh my mouth is watering! I'm getting together with GF tomorrow night for Indian food. I've never eaten in any of the San Diego Indian restaurants. Anyone got any suggestions?

Tonight will be BBQ'd chicken thighs marinated in Jerk (Jamaican) sauce, [and since the BarBQ is going, hubs will cook some chorizo too], green salad and garlic bread sticks with a glass of Cabernet, Dessert features cherry turnovers and Peets coffee. To h*ll with calories today.
I can't believe its Sunday already. Leftover Chinese food tonight.
I'm currently boiling water for my Bigelow English Tea. Hopefully, it will soothe my sick body n revitalize my immune system... I'm so tired....
Never heard of Chicken Tikka Masala. Going to Google how it looks.

Friday night it was leftover ham and pineapple pizza. See if I can come up with something better tonight.

How about skip the puree and just do the ice cream, plus the banana. (Ooo, a banana split, yum!) Is there any reason to be worried about a balanced diet at this point?🙄

It was chicken noodle soup and a chicken sandwich last night. See what I can come up with tonight.
