Find Care & Housing
Sue, I eat about any vegetable, but spinach (I do eat in a salad, but not cooked) (same with kale). I love Brussels spouts. I'm lucky - my husband and his sons/grandsons eat anything. So I don't have to cook anything special. I fix their favorites sometimes and I fix myself a salad. I always keep cooked, frozen chicken breasts to cut up and put on my salad. I have had nopales and love tomatillos. Use them in homemade salsa.

Yum, brussels sprouts, sauteed in olive oil and served with boneless pork chops or steaks spiced with chili powder and garlic - husband made it for supper tonight...

Becky,
I'm probably one of the only people I know that likes Brussel sprouts. Mother called them "baby cabbages".

I liked pretty much all the vegetables that were served when I was a kid. Okra, however is not my favorite, unless it's fried.

There are some veggies here in Mexico that we don't have in the U.S..
Alcelgas is a green leafy vegetable sort of like spinach-delicious with pork.
Chayote looks like a light green pear. Tastes like zucchini or a mild squash, good in stew.
Verdolagas are small dark green leaves with a thin stalk, great cooked with meat.
Nopales are cactus cut in small squares (slimy when raw but good when cooked). Hubs mixed them with small pieces of chicken breast in a green tomato sauce tonight.
Tomatillos are green tomatoes. I love the twangy flavor, great for sauces.

I could go on but I'll stop here.
Buen Provecho or Buon Apetit.

Veronica, I canned over 100 quarts of half runner green beans and froze I don't know how many Brussels sprouts, broccoli, asparagus and cauliflower. I have to eat a lot of vegetables because of diabetes and kidney disease. Rest of the family eats anything I put on the table.

Becky can you hold the brussel sprouts and make me some green beans.
Growing up sprouts were one of the things that lasted all winter even if you had to go out and pick them frozen solid off the stalks. No frozen veg in those days just the sprouts and root veg that you could still dig up. The green beans were preserved in a big crock with layers of salt.

CW, I have a husband who eats and exercises daily. I walk every every evening and I don't eat everything I cook. Plus we have a 13-yr old living with us and have 7 other teen/college age grandsons who drop in to graze frequently. I like to cook and so does our housekeeper (especially pies) so there is always plenty. We don't live in an area with many restaurants, etc.

Becky, do you exercise like a lunatic or are you actually 300 lbs? Back when I had mom at home I walked/ran for an hour a day in order to reduce stress and earn my comfort foods but I still gained weight, now I've been cutting out desserts and cutting back on everything else and still gaining weight, if I have to do both I think I would rather just go out and buy a coconut cream pie ☹️

Pork roast with apples, mashed potatoes and gravy, green beans, salad, coconut cream pie. Not my choice today - PJ and grandson picked this one.

Sue, I love chicken! I didn't know that one can mix chicken and Chorizo in a meal. Here on island, I tried the Chorizo fried rice. My stomach definitely didn't like it. It was trying to send it right back out. Yet, it must be popular because it's still in the breakfast menu.

Sis had dinner ready. Canned beef stew. I took one look at it and my whole body shook with revulsion. So, I had for dinner the Banquet spaghetti meatball. Like everything else, it had no taste. It was blah... (flu knocked out my taste buds).

Kelsey,
Was your "chicken" Tikka Masala a prepared dish (TV dinner, prepared packet?) Was it made for you to add the cooked chicken?

Kitchens of India is my fav brand of (condensed) paste to make Butter Chicken Curry or Tikka Masala. I buy it on Amazon (6 packages=$10.). Add butter, raw, boneless-skinless chicken pieces, water (or chicken broth) and the paste. Cook for 25 min. I serve it with Basmati (Himalayan) rice and peas. You could make raita (plain (non sweet) yogurt, seeded, minced cucumber, mint, cumin powder, pinch of salt, squeeze of lemon or lime) for a refreshing side dish.
Since I'm an odd bird, I'll often put on Indian music and eat these yummies in my sari or salwar and camise (Indian clothing). Hubs thinks I'm strange. What does he know? He dumps 1/2 a bottle of Mexican hot sauce on everything anyway. Olé!

When I lived near SF, there were lots of Indian stores and restaurants but not so many here in San Diego area. I've made glub jamun (sweets) for dessert but I'd rather buy them. Oh my mouth is watering! I'm getting together with GF tomorrow night for Indian food. I've never eaten in any of the San Diego Indian restaurants. Anyone got any suggestions?

Get better quick bookluvr. Remember the fluids and sleep a lot.

Tonight will be BBQ'd chicken thighs marinated in Jerk (Jamaican) sauce, [and since the BarBQ is going, hubs will cook some chorizo too], green salad and garlic bread sticks with a glass of Cabernet, Dessert features cherry turnovers and Peets coffee. To h*ll with calories today.

Oh, Bookluvr, I hope you can get some R and R soon. Flu is tough enough without all the cooking and housekeeping thrown it. I love the Bigelow brand of tea. Hope you feel better soon.

I can't believe its Sunday already. Leftover Chinese food tonight.

Thinking a pea soup would be great tomorrow and Tuesday with highs projected in the teens. But making it today when it is in the mid 60's just is not going to happen.

No beef shank soup. Full blown flu today. However, I was able to finish everything this morning before my body crashed.... Laundry, cooked bfast for sis and I - fried rice, eggs n sausage. Swept front porch to rid mango blossoms. Cooked enough rice for lunch/dinner. By 11:30am, I was miserable n took a nap... Woke up hoping sis at least cooked lunch. Nope. ... I made enough to cover lunch and dinner.

I'm currently boiling water for my Bigelow English Tea. Hopefully, it will soothe my sick body n revitalize my immune system... I'm so tired....

Never heard of Chicken Tikka Masala. Going to Google how it looks.
Edit: similar to Chicken curry.

Sorry bookluvr, I hope you are feeling better soon. The beef shank soup sounds good though.

Hi Barb, The curry sounds good. I love curry potatoes.

Friday night it was leftover ham and pineapple pizza. See if I can come up with something better tonight.

Take care everyone.

Coming down with something so I decided to buy 2 cans of chicken veg soup. One can for today. Second can for tomorrow. I had it for lunch at 2:30. I warmed it up for dinner tonight. I ate it hungrily and then my stomach wanted to send it right back out. Nope, now I remember why I rarely buy that soup. I don't like the taste. Tomorrow, if I'm not too sick (as contagious), I will order a take-out lunch beef shank soup. Too bad this restaurant doesn't do chicken soup.

Hide it in ice cream, seriously?
How about skip the puree and just do the ice cream, plus the banana. (Ooo, a banana split, yum!) Is there any reason to be worried about a balanced diet at this point?🙄

Caregiver texted that the Viking refused purée so she'd try to hide it in ice cream - eewww

I suggested a banana instead

cw - you reminded me I was going to make a meatloaf. It is about ready to come out of the oven. I stuck carrots, celery and an onion in the food processor and processed till it was mush, and added it to the meat with an egg and some crushed tomatoes. I will have it with mashed cauliflower which has cheese and onion in it. Dessert is almost always a little very dark chocolate with my (decaf) coffee.

It was chicken noodle soup and a chicken sandwich last night. See what I can come up with tonight.
