Hi Send,

Its funny that you mentioned your pickled beets because today my colleague gave me a jar of pickled mushrooms with lemongrass and a jar of pickled carrots.

It was a bag of Cheetos for tonight.:-) I will have to try and do better tomorrow.

Don't try this at home.

Having jar of pickled beets needing to be used up, my thought processes went like this:
My parents used to serve pickled hard boiled eggs. Soaked in beet juice in a jar.
Poaching eggs today, I added lots of pickled beet juice. They are going to turn bright red, right? They will look like the blood moon tonight.

Like I said, don't try this at home. Lol.

That soup sounds good Cwillie. I will use some of the ingredients. Not sure how to buy the sausages I might like after all these years of cooking. There are so many different brands and flavored sausages now. I have actually put packages in my cart 3 times and then changed my mind. Guess I will go with the Italian kind available for many years.

I usually love sausages.

If you come to Texas skip the Taco Bell!!! AND the Mexican chain restaurants.

The most awesome are family owned hole in the wall establishments. Some not very attractive inside or out but OMG the food is great and cheap!

We have one such establishment near us. It’s a one stoplight town. The best Tex-Mex food ever! Think 1950’s diner that has never been updated....

On Friday nights they cook steaks “outback” on their grill. LoL. You can cut the ribeye with your fork! And it melts in your mouth. Well almost. There is no chew, chew, chew going on. I am not a big steak person either but I usually ask for a bite if my son orders one. I HAVE to order 2 Enchilada(cheese),1crispy taco, rice and bean plate. While waiting for that plate to arrive they bring hot sauce and tortilla chips. OMG it’s wonderful!

I hope your trip to Texas is fun and I hope you find a truly authentic Tex-Mex place to experience.

I've made a giant pot of soup, even when I resolve to reign myself in I still end up tasting and adding until I end up with enough for a family instead of a more sensible amount. Fortunately I like soup a lot, and this batch turned out better than I thought it would....
I browned together: two honey garlic sausages-onion-celery-red peppers-garlic-frz mixed veggies+bay leaves-beef broth-canned diced tomatoes-canned cannellini beans-fusilli pasta

Thank you Luckylu! I didn't know there was a Red Lobster biscuit mix at the store. I will have to look for it. Great idea about adding more cheese. I love a good biscuit.

Hard to believe its Monday again. I had the most delicious salad with citrus dressing. Mixed greens with almonds, feta cheese and dried cranberries.

Dinner tonight. Sis only cooked rice. Nothing in the freezer/fridge was calling my name. I opened the pantry and looked at sis' stash of food. Nothing. I eventually 'cooked' half a can of corned beef hash with chopped small onions and a small fresh hot red pepper and black pepper (bought round black pepper and use the grinder over the food.) Then I checked if sis' carton of eggs had eggs. Yes! So, I quickly fried 2 eggs (sloppy over-easy because I was in a hurry to eat). That was our dinner....

The best Mexican restaurant here is a hole in the wall, very cheap by local standards, and only open for weekday lunch! Don't think you would find them on Trip Advisor. Nope, not on TA, just checked.

Fave niece in Texas is thinking of places to take me when/if I go this year in October. I'm unable to go with fave sis and her family in Nov since it conflicts with my bosses scheduled trip. So, niece is naming all these steak places. She suddenly stops and asks me if I like steak. I don't like steak. Then I heard her friend's hubby say ribs. I quickly said, "I like ribs!" {whew! terrible when you're a picky eater who has acid reflux and food sensitivity and jaws that cannot chew, chew, chew until the d*rn steak is small enough to swallow without choking on it!}

As a finale, my niece said, "We have Taco Bell here, too!" {groaning. I don't like Taco Bell...} Because some of you have been mentioning Mexican food, I am sooooo curious on how it tastes! So, I tentatively asked her, "Do they have REAL Mexican food there?" Oh, yes,... but it's very crowded, long line and expensive.... sigh.... I'm going to have to Google on best places to eat in El Paso....

Between my husband and I we managed to make spaghetti and meat sauce. Hubby began by dicing carrots, onions, peppers and minced garlic. He browned grass fed beef.
Then he deserted the kitchen, said he couldn’t think what to do next. That’s because we had no canned tomatoes or premade spaghetti sauce. I found a can of tomato paste. That with vegetable broth made the sauce part.

We’ve lost our ability to cook! So today’s meal turning out well was nice. We used to be great cooks.

OMG, I'm craving one (or 2 or 3) of those Red Lobster biscuits now. My store has the mix but I try to walk by because of the calories. Mmmmm, the melted butter with the cheese!
Those and a loaded green salad or a bowl of clam chowder would be all you'd need.

Will put it on the grocery list now. Thanks Lu. ;)

Hi cdnreader....At the grocery store,they have the Red Lobster Biscuit mix.Maybe your store carries it.Iv'e made them and they are really good and easy.The best part about making your own too is that you can add more cheese than is called for.....yum~

I love Red Lobster but haven't been in a very long time. I am having a craving for their cheddar biscuits.

Family was over last night and I'm still having leftovers. It was pizza, chicken and mushroom penne with marsala sauce and a garden salad. I hope the garden salad makes up for the pizza and pasta.:-)

We went to red lobster yesterday, and mom ad I got the fish and chips. Brought home enough for 3 more meals.. no lie! Leftover fish and pot roast tonight,, mix and match!

Believe it or not, there ARE refried beans on Mexican pizza in Mexico. I live in Tijuana and you can order them on it, also jalapeños and chorizo. (Ugh! Mexico has the world's worst pizza, IMO.)
My Mexican husband would have no trouble with any of that (he calls himself a frijolero (bean lover) but I draw the line putting refried beans on a pizza. Some things are just sacred.

I finally made the green Thai curry with veggies and rice. It was more than spicy, but, hubs abided by the mandatory "one bite taste test" before dumping 1/3 of a bottle of (Mexican) hot sauce all over it! Sigh, so much for cultural cuisine diversity.

I went to check on Jay at dinner time. He was loading his car to come to our house to use the grill. I said okay. When he unloaded , he had steaks, already seasoned ready to grill, a big green salad with homemade ranch dressing and twice baked potatoes. He cooked everything and it was so good. Now he and the boys are in the kitchen dipping stuff in chocolate. Bananas, frozen green grapes, mandarin orange slices, ritz crackers with peanut butter, pretzels. I never knew grapes dipped in chocolate would be good. He's a good brother and a good cook.
