I had to ditch my cast iron pans as they are just too heavy now I am older! I love my old Revere stainless small omelette pan. Guess its now well and truly seasoned! Husband likes omelettes so thats a life saver as his appetite is so bad - served with grilled tomatoes and petit pois. Soup as starter. Eggs from farm down the road. Perfect little packages of nutrition!

In the movie: Under the Tuscan Sun, her realtor has a talk with her about the despair at not having a life, but has a home with extra bedrooms, a cook's kitchen, huge italian villa....but not a husband...etc.
He tells the story of a railroad being built through the mountains before there was a train that could make the trip. Then the train came.

Hope - thanks for reminder about roasted veg. Will also be great with pasta . I must always do this instead of letting them go squishy in the fridge. Except for cabbage which hangs around waiting........

Made apple cake last night at last! with applesauce I had prepared a few days ago - still OK in fridge. Husband pleased - it was delish! But now he is complaining at the state of the kitchen this morning. I nearly lost it!
This cake is easy though - just throw it all in mixer bowl for a minute. I forgot the demerara sugar and made a mess trying to get it back in the bowl from the tin. Next time I am going to make two or more and freeze them . Bramley apples galore after rain and gales here blew them down. Just need someone to make lots of apple sauce for freezer! So many great recipes out there for apples .including soup! Cooking is a welcome change from the house and yard work and of course caring! if only I had more time. Though thankful for instant meals from supermarket - miso soup in packet as well - tasty!

I can't EVER find anything I REALLY want to eat. Last night I really wanted fried chicken and read about tho place that has supposedly GREAT Central American fried chicken (Pollo something or other...)? But my girlfriend took me by there o the way him from my wasted few hours in the ER, and they said it would be 12minutes before ready because they had just "dropped" it, and she wouldn't wait.i was CRUSHED. and I've been wanting some ever since.

I make excellent lasagna so I rarely get it at a restaurant . But this place is great New York Italian deli and bakery. It tastes great and is better than mine because I don't have to make it.

Shara..cheese lasagna...sounds so good..I just remembered I forgot to eat today...I'm not very hungry but that sounds nice and comforting.

Yesterday I found myself in a town that has a great Italian Bakery and deli, so Mom and I stopped and bought a big piece of meat Lasagna and a small piece of cheese lasagna. Last night we had the meat lasagna. Tonight I grilled a sirloin steak, steamed some fresh green beans and heated up the cheese lasagna as a side. Very very yummy.

spinach tagliatella with squash and sausage - my 7 year old vacuums it up - I like to see him excited about anything but hotdogs and pizza - those of you who had/have kids know exactly the food challenges of the young!

Making split pea with ham soup. Sauté everything in the garden, simmer, take out ham bone, use immersion blender, fresh French bread and butter. One dish meal we will eat all week. My fav soup in the world.......

Well I'm having a salad tonight, and after that some apple crisp! Mom will just have the apple crisp... fruit and oats sound like a pretty healthy meal to me ;)

Tonight maybe I will make apple pancakes or apple crisp! Last night made a kind of colcannon with mashed potatoes shredded cabbage and onion plus lashings of butter. It tastes better fried in patties than baked my husband says. I will use some leeks next time rather than onion. A recipe on the net says be warned British and Irish food used to be awful ( dont I know it - school dinners!) This is OK but must be well seasoned. Also good for leftovers potato and cabbage carrot etc. Can be served with meat as side dish.

Tonight was leftovers again. My hubby loves when I take leftover pot roast and shred the meat grill bread and the meat and put it on the grilled bread with Mayo. Not something I make for myself, but he loves it. He got that and Mom and I had warmed up pot roast, gravy and mashed potatoes.
We always have some kind of dessert later in the evening when watching tv. Hubby usually has vanilla ice cream. Mom has mint chocolate gelato and I usually have Edward's Key Lime pie.
