Tonight was church night and since hubby agreed to start going to church with me again, we decided to have dinner out with Mom and a couple we are close to that just got married. We had a wonderful dinner and the message of the service was how to be a Godly husband! I told my husband that I called ahead and special ordered the topic!

All I want is french fries,,or steak fries.
Really, really upset....it is real minor, and probably unimportant to all of you excellent cooks out there. Fell asleep last night with my dark chocolate candybar unopened. Today, found it between the pillows, squished, melted. I should save it for halloween, ha..

Sendme, you mentioned rice, why not a nice pilaf? Saute some veggies...onions,celery, corn, grated carrot or whatever else you like, brown the rice, add in some broth if you have any or a bouillon packet. Have a little fish or chicken breast to go with it, or go meatless and toss in some beans or tofu, and have a nice salad on the side.

Thanks Sharadale, it does sound good that way.
We have a phatn'juicy burger place that recently opened nearby, now advertising Loisiana fried chicken just today. Never ate there, but just cannot place my trust in such a diverse menu in such a tiny shop that just failed to sell boba lollicup-somethings.

My husband called what I made tonight Chili-mac, hoping I never remember how to make that again. Saving money on grocery is just not worth it.

Send me, chicken and waffles is a southern dish. They take waffles and put chicken, usually fried, on top of the waffles and then drench with maple syrup. As a Yankee, there's been a few things that I have learned here.
Tonight it was very late when it was time for dinner and I had nothing prepared, so it was take out. Mom and I split a calzone and hubby asked for a QP with cheese and French fries. I don't like doing that but there are times when I would just like to sleep through it.

This is the question I dread everyday - "what's for dinner?" I guess mom has few things to look forward too and just wants to know what she can think about. She may ask me this 2 or 3 times by 9 AM....and the more she asks the less I am apt to plan something...(am I being difficult now?)

We are having take out tonight from the Fried Clam place that does Gluten Free!!! YAY!!

My mom puts the chicken and gravy over the plain, hot waffles. I am not a waffle fan... only eat them this way! Kind of like bisquits and gravy...

Gee, Pamz, what do you do with the waffles? Are they dessert with syrup? Or some other kind of waffles, because I only know to make eggs, bacon, and waffles /w syrup. With chicken, how is that done? Interested....

Cold, rainey and windy here.. and I am running on very little sleep. So last night was chicken and waffles (leftover Costco roast chicken).. and today will be stuffed pepper casserole. My garden is overflowing with last minute banana peppers and small red bell peppers.. so I chop them up and mix it all together instead of stuffing... Comfort food and fairly healthy

Today was another double dinner day. I made two chicken hot dishes we both like. The side (and green) was cucumbers in seasoned sour cream. I had to leave a portion without onions for each household! And I had an awesome bag of clementines on hand. I dipped the segments in melted chocolate and added a few strawberries also dipped in chocolate and then dipped again in sprinkles to the same plate. It looked so pretty! I told my friend it was either an appetizer or the dessert.

Today has been cold and windy, so lunch was low carb egg drop soup, and I made a big batch of low carb taco soup tonight. Still freezing. lol

Cwillie, I know I do, just wanting to wish the pounds away. But I know that I would feel better just slowly losing 10 pounds, so always conscious of not feeling as good, I will lose some weight!

Tonight, I made chicken Fettucini. First I cut up two chicken breasts a in olive oil and garlic. Then I cooked the fettuccine and heated up the Qlfredo Sauce from a jar and mixed it all together for delicious dinner!

I'm doing double dinner for tomorrow. My good friend for 60 years is trying to get some projects done in the next month. Her husband has stage 4 cancer. I can't help directly with the projects, but I'm going to make her several dinners over the next month.

Tomorrow will be a hamburger/mushroom mixture baked into bread dough ("stroganoff loaf"), a creole salad with orange segments and blue cheese, pickled beets, and a small pound cake with fresh berries.

Years ago I bought 2 cast aluminum 6-cup Bundt cake pans (in other words, half size.) Just perfect to make one batch of batter and then keep one and give one!

Sharadale, I get a kick out of people who "don't like leftovers." What nonsense! :)

If a recipe calls for 2 cups of cooked chicken, what difference does it make if you cooked it just for that recipe, or you cooked it yesterday and ate part of it then? Glad he liked what you made!

Everyone loved the dinner. I think I might hold five pieces of bacon until the end. All the bacon was limp. But the taste was awesome.

Oh I know, cwillie. Just cooking the bacon added 5 lbs to my waistline! My husband is not a big chicken fan so these recipes that I find on Pinterest have really helped out.

Doing a crockpot dinner tonight because grand baby is coming for babysitting adventure and I can never make dinner when she is here. Who would want to! Anyway, I went to my boards on Pinterest and found a recipe for cheesy bacon ranch chicken!
Two tablespoons olive oil in bottom of crock
4-6 chicken breasts (frozen or fresh)
1/2 c ranch dressing
1/4c teriyaki sauce
1c shredded cheddar
10 pieces of crumbled cooked bacon

Put olive oil in bottom of crock
Place chicken on top of oil
Mix ranch and teriyaki together and pour on top of chicken
Put shredded cheese on top trying to distribute between chicken pieces if possible
Add crumbled bacon
Cook for 4-6 hours on low or 3-4 hours on high depending on thickness of breast pieces and if frozen or not.
Never made it before, but sounded so good. I think I will serve with Uncle Ben's Basmati rice that cooks in micro in 90 seconds. This is the only one of his microwave rices that I can stand. Also salad with ranch dressing.

I discovered I also had portabella mushrooms, so I didn't make a trip to the store last night. The stir-fry was excellent, and took less than 20 minutes to put together.

I also was out of the various bottles of sauces -- Szechuan, Asian stir-fry, mandarin orange, etc. -- that I often rely on. So I found a recipe for which I had all ingredients on hand, and made it last night. It was very good! Will probably do it again, with some variations. I got it from the Food website. In case there are other stir-fry fans here --

Ingredients
1/4 cup soy sauce
1 1/4 cups water
1 tablespoon grated ginger
2 cloves garlic, minced
1 teaspoon sesame oil
1 tablespoon sugar
4 teaspoons cider vinegar
2 tablespoons dry sherry or 2 tablespoons rice wine
3 tablespoons cornstarch

Directions
Combine all ingredients except cornstarch in a small bowl or a 2 to 4 cup liquid measuring cup.
Place the cornstarch in a separate small bowl, and whisk in a little of the mixture from step 1.
After the cornstarch is disolved, mix it into the entire sauce mixture.

Just before mixing in to vegetables and/or meat, whisk the mixture one more time.
Add about 2/3 of the way through stir frying.
Enjoy!
