Enjoy the break Jeanne!! Glad you doing fine.

Dinner tonight is left over tri tip that will be cut up into cubes. I am making oven baked brown rice, when done I will add the tri tip and some sauted veggies. Since hubby doesn't like gravy...I will make gravy just for me. A salad with sunflower seeds, tomatoes, green leaf, onions and cucumber and feta cheese.
Have good evening, almost 2 pm here so got to get going on dinner.

It would have been a good day for a roast in the crock pot here. I tunred the a/c off (not that it was running) and opened all the window, and I'm thinking of pulling on a long-sleeved shirt. Nice October day.

What we are having is hamburgers. Since we weren't sure how I'd be the day after cataract removal, and since Pat is home today, we scheduled him to make his famous burgers. I know it involves beer and fresh mushrooms, lettuce, tomatoe, and Swiss cheese but I'm happy to leave the details with him. :)

(I'm doing fine. I could have pulled a dinner together, but I don't mind a little break.)

helpontheway, do you leave the skins on your potatoes?

Corn muffins. Mmm mm mm. I'm southern enough to love them crumbled up in milk.

I had my cataract removed this morning and slept all afternoon. Dinner was mystery soup from the freezer (label came off) and corn meal muffins. Mystery turned out to be Fiesta Soup (sort of a chili with Southwest flavorings). It was good to wake up to cooking fragrances as Barb took over tonight. Think I'll have some watermelon later, when I wake up to take my final eye drops of the day.

Culver's for some unneeded calories
Now that my sister and her friend left I have to resume cooking only for two. Dad was great on eating leftovers of the recipes I tried and wouldn't make again. He says the food at the assisted living place is good but he isn't a fussy eater to begin with.

Since my car is disabled I needed to make dinner with what is on hand. I had a small package of breaded shrimp, just right for the two of us. And I had some leftover fresh spinach that needed using up. I searched for a salad recipe and selected Spinach Salad with Honey Bacon Dressing from the Food website. I happen to have all ingredients on hand. It was awesome! (I'd put one more egg in it next time.)

thats too easy ash . the power company told us 25 yrs ago that a big dead tree wasnt their problem . i asked the wife to call the power company and tell em that drunk sob was out in the garage sharpening his chain saws and the tree was coming down . they had a crew out there taking the tree down within 24 hours . life belongs to the ones who run the biggest bluff ..

Book, if I had a loaf of bread and some eggs, I'd have a fried egg sandwich, with ketchup. If I had a loaf of bread and cheese, I'd have a grilled cheese sandwich. If I had a tomato I'd put slices into the grilled cheese sandwich.

Cap I have a huge (and I mean huge) tree that is dead inside and must come down. As it's by the road the township will take it down. Much of it will have to come down by rope and chain but the rest will be dropped over into the field. Can't do it until the soya bean crop is off. Enough wood there to feed the wood stove for a couple of years :)

edna is pretty smart , ash . she probably realizes i was being taken advantage of . poa is being removed because of inaction , lack of communication ,and poor priorities . all involved must realize the added strain that puts on someone trying to provide daily care . edna will pitch a bitch to the right person and our little country rides will resume . the rides had been verbally ordered by her doc previously .. on the night i was supposed to be relieved to see my grandkids i hadnt seen in 2 years , poa was spending time with her grandkids . that shows its own brand of stupidity without any help from anyone ..

10pm. I just finished changing dad's pamper. I haven't eaten dinner yet. I was just wondering what I can eat. No, I didn't cook rice. Got sidetracked with balancing all the bank accounts and writing out checks.

I was just thinking ... I got a whole new loaf of bread. What can I do to it - to make dinner? I smiled when I read LadeeM's dinner. Aha! I still have an unopened can of chunky peanut butter. Nah, I don't feel like eating that. Most likely I'll scramble eggs and salami sandwich, with a dash of tabasco on the meat.

Jeanne - I'm glad that the air bag didn't inflate (since you didn't mention it.) What a coincidence, isn't it? You and the other driver are neighbors and his line of work. That can always be your common thread of discussions on future meetings (at grocery store, etc...)

Yeah, Jessie, I hate when mechanical things break down or malfunction or get busted. It is so tedious to set things straight. And in this case I was on the way to a family party I was really looking forward to, so I am disappointed.

The guy who hit me turned out to be a neighbor that I hadn't met. We got to talking and he was expressing his regret. I said that my husband died a year and half ago and he had dementia for 10 years before that, and my perspective has changed a lot. Just a car is something to take in stride. It turns out he is a caregiver in a memory care unit, and is in school to become a nurse! So we talked for quite a while.

Insurance has set me up for repairs, without running around getting estimates, and has authorized a rental. I'm going in for cataract removal before the crack of dawn on Monday so there will be a little delay in getting everything started. But it is just a car.
