Treated myself to a store bought roast chicken. I cook and eat healthy but once in a while I need a treat. I don't care much for fish unless it's fish and chips (I grew up in England). Ran a couple of errands and went to the NH (3rd time in 4 days aaarrgh) then mowed for 3.5 hours.

Almost 6 p.m., marrow bones roasting for the dogs and I'm pooped. Time to do playtime and clean up my little rescue kitten, Lucy, who's in quarantine right now, feed everyone and flop in front of tv with my supper. {yaaawn}

Walleye is fish of choice in Minnesota restaurants. You can even get it on a stick at the state fair. It is not as widely available at the meat counter, so to serve at home you have to get lucky at the grocery or on the lake!

Nice, Pam!

We're doing steaks on the grill tonight. Last night ended up being a "clean out the fridge" night and we had leftovers. Tonight is grilled steak, salad and baked potato.
Might steam some broccoli for myself, Mom won't eat green veggies unless they're green beans.

I have a *huge* Lake Superior Whitefish in the freezer - my sister brought it back from her last trip for Mom. So I have to dig my cast iron skillet out of storage (that should be interesting) and cook it on the grill outside. Mom wants it breaded and fried, and I refuse to cook it in the freshly-painted kitchen and make it smell like fish.

I have 6 pounds (3kg) of Walleye, aka Yellow Pike or Pickerel caught this morning in Lake Erie off Dunkirk NY. They are seasoned with pepper, garlic, lemon juice and a strip of bacon, to be grilled in foil and served up with corn on the cob and garlic mashed red potatoes. :-)

Think I'll take some steaks out of the freezer tonight. This past week since we got home from vacation has just been mostly fast food or sandwiches, and I'm tired of that - it's depleting my bank account and isn't good for either of us. It's just convenient and easy, is all. I have a pile of dishes in the sink to wash, and 90% of the house is still covered in dust from the work that was done while we were gone. I just haven't gotten to it yet. My work has had me slammed since we returned. Add to that a nasty run-in with the ex and then learning that I couldn't go see my son because of my own screw up with the dates and you have the makings of a long, depressing week!

Starting to pull myself out of the doldrums, however, and should be back on my feet by tomorrow. Now if I could just get Mom to do her necessary hygiene....

Tonight was a the standard meat-potato-vegetable meal. (Rib eye steak, baked potato, roasted broccoli with lemon butter). Simple and quick and appreciated, but a bit expensive.

Last night I did a Mexican tortilla casserole recipe, from Splendid table.
www.splendidtable.org/recipes/mexican-tortilla-casserole

Its a bean and tomato mixture with seasonings, spinach, and corn, (I cooked that in my wok, since none of my skillets would have been large enough) layered between tortillas, and each layer topped with cheese. I baked it in a spring form pan, which allows neat slices when the side ring is removed. Barb drenched it with Sriracha sauce. Pat and I were satisfied with sour cream and cilantro.

It is a nice no-meat dish, fairly fast and easy, and a little off the beaten track.

Tuna tomorrow ...

i love tapioca.
my brain is working like that of a 20 yr old ( cept with maybe a little more life experience ) .
a local deputy a few weeks ago asked me to get him a couple of huge limestone planks to use as instant porch steps . i ordered em custom cut for 35 bucks a piece . a great price but this anus thought maybe id be glad to give em to him . im sending him a bill tonight for a 27 dollar restock fee . i cut wood for 7 hours to cover the loss this scumbag imposed on me . its not so much the cost recovery as the point . its a small town , he'll be s*it in my book as long as i live if he dont make his word at least partially right .
then i wrote aps . i want to reconnect with edna but i wont take poa's abuse in order to do it . i want my country rides with edna and weve amassed a dozen or so people who see the value in these country rides .
my brain is working better . most decisions i make promptly then still cant find a flaw with days later ..
hepc causes its own brand of early senility . lack of o2 and virus in the brain .
watch out world , im thinking , and it isnt going to go well for everyone ..
