It sounds like your uncle is cognizant.
It sounds like you have had a good relationship over the years.
Why not talk to him and present this dilemma to him.

A great deal of difference it would be if he is going to have a funeral right after he dies or does he want a "celebration of life" at a later time?

there are stories that I have heard where a person will wait until everyone leaves the room and they die then. (The Hospice Nurse tole me that dying is a private matter and some people prefer to be alone) It is possible that your uncle does not want you there when he dies. You can do nothing to stop his death, change the time or date.
