My Mom refused to eat. What can I give her? Please and Thank you. I'm looking for a puree and that it'll contain protein.

Contact her doctor and ask what is safe for her to eat. Did she have a swallow test recently?

I would ask for a Hospice evaluation.
A person with dementia often does not do well with rehab of any kind. I am going to assume (probably bad on my part) that she was alone for the 8 hours and that when the caregiver arrived she was found. So I am guessing the damage from the stroke is/was extensive. She will probably not make much progress in recovering.
I urge you not to do a feeding tube.
As the body shuts down eating and drinking less is normal.
Her body does not feel hunger like yours or mine does.
Offer thickened fluids.
Any of the Protein drinks can be thickened to make them safer for her to consume.

You can pretty much puree any foods you want. Any meats just add a little gravy. And like already mentioned Ensure also has a lot of protein in it but may be a bit boring if that's all your mom has.
So whatever she normally likes to eat just put it in a blender and puree it. And you can use the product Thick It to thicken her drinks too so she won't aspirate her drinks either.

On the floor for 8 hours seems more than minor... Can you tell us what medical follow-up there was after this incident? 911/trip to ER? What does her doctor say about any of this?

If she's refusing food, she could wanting to "exit". Maybe have her assessed for hospice.

Or, she had cognitive damage from the stroke and refusal to eat is a symptom of this.

Has she had a swallow evaluation? Is she in rehab for anything? She can get PT for her swallow reflex, if this is what's going on.

More information would be helpful.

Try different flavors of "Ensure - meal replacement drink".
Most of them, like chocolate and vanilla are thick like milk.
They have some, like apple they call "Clear" which are thinner and sometimes easier to drink.
